This method is THE only way to cook bangers straight from the freezer. I put them in a little water with a chilli and a bay leaf then when the water has evaporated and the pan has nought but a little rendered out lard in it remove the flavourers and add a tablespoon of oil, nothing fancy just basic rapeseed oil, and bring to a nice sizzle and turn and brown to finish. Never fails me, my bangers never split and the middles are firm but juicy. If you do them in a traditional English ale (Newcastle Brown should be available in Canada, that'll do the job) and slowly reduce the beer to a syrup before adding some sliced onions, a couple of bay leaves and when the onions are done you'll have the perfect base for a fantastic onion gravy for the ultimate Bangers 'n' Mash.

I’ve usually done something similar. Instead of water, use beer (newkie brown!) but only to halfway up the snags. Turn them around while cooking. When most of the liquid has evaporated and all you have in the pan is a thicker syrupy liquid, add onions. Sausages will have cooked at this point. The onions will soak up the flavours from the pan and the sugars in the beer, sausages will start to brown. Really great start for an onion gravy along with the snags!

You just dropped some good advice. IMO, using beer to merely poach the sausages doesn't impart any flavor that I could detect, but your method of reduction and using beer as a base flavor for an onion type gravy would make for a great sauce with the snags, and the mash that go with the bangers....

When I was a younger husband, my wife sent me to an ancient butcher shop, the old Italian guy made , what my wife said was the best sausage ever. I bought what I needed, and the owner looked at me, "how you going to cook those?" Barbeque, I answered, "What!!!! who told you that was how to cook them?" the old man said. I followed his instruction, and have for almost 40 years since that day. I steam the sausage first, then Barbeque or fry (or add to sauce) . Always fully cooked, never burned. Boiling is OK, but steaming is quicker and the old man told me to do it that way (forever).

@@saintjames4944for a thick sausage, say inch thick, 6-7 minutes at the slow boil. The trick though is that they were in the water from cold. That means the entire sausage thickness is to temp when it's boiling.

I'm now 72. As a kid, I was in the cubs, then scouts and so on. The sausage sizzle was an integral part of our survival training program! We were always taught to boil the snags first, otherwise they would explode into a gooey mess. Little tips like this got me through those pioneering years!!

I’m a bit younger at 59 and I’m from Britain. If I’m not mistaken the reason that would explode in former times….and the reason they were called “Bangers” in Britain and elsewhere…is due to the excess amounts of non-meat fillers and water that sausages used to contain when meat was scarcer. Hence better to partially cook them by boiling or prick the skins.

This is the way my late Mother used to cook thick pork snags for us. She was a fantastic cook, as was her mother. I loved cooking, & attended 100’s of cooking classes’, as I enjoyed it so much. Once Microwave Ovens’ became popular in the early ‘80’s, I attended every cooking course I could, to the extent I was asked to be a teacher of m/w prepared food! My son is a Sous Chef, with Patisserie Quals, so the cooking continues!

I didn't know this for years about sausage until I read the cooking directions on a package of different brand of link sausage that I had never tried before. It gets the middle up to temperature on all types of sausage. Thanks for pointing this out for those that didn't know this trick.

I've been doing this with rolled pork sausage for years. I put the sausage in a pan and put water about half way up the sausage. Cook medium flipping several times until the water is gone then continue until they are browned perfectly. Simple, quick, good.

I'm an American but I was living in Colchester around 2000. I found some sausages at Tesco labeled "Lincolnshire" that I absolutely fell in love with. After burning a few just frying, I fell on this technique that I still use today for any encased sausage. Back in the US, I have never found anything quite like those Lincolnshires, but I keep looking,,, Thanks for positng this!

As a brit living in the United States, I really miss british sausages. Johnsonville do the brown and boil method to cook. There are places where they do british style sausages, not sure about Lincolnshire sausages, but you're not alone in missing them.

I would boil the sausages in a good, dark British porter and make a gravy with it, then brown the sausages with caramalising onions, and finally, mash some potatoes with an entire stick of butter (Le beurre, c'est ton ami!), and voilà! A British pub classic!

Learned this 50+ years ago when I migrated to Australia. When using thick sausages for a BBQ it was standard practice to pre cook by boiling to prevent burning and overlooking the outside when on the grill...

I always do the same. They lose a lot of taste if you throw the fat in the water away. I boil them down till there’s nothing but lard and it cooks in that.

My mother in law taught me this 60 years ago and I've done it ever since. When the children were still at home I would boil up a saucepan full of sausages and put those we didn't use on a plate in the frig covered in foil. They kept for longer when pre cooked than when fresh.

FINALLY!!! A bratwurst cooked the right way! Simple, direct, delicious! Every "chef" in the world believes they have some super secret method or ingredient to create the most heavenly brat on the planet, when in fact if you choose a quality sausage and boil it done, then brown the outside with a hot skillet it's as good as it gets! Great job!

I love brats... But to call them a quality sausage, I have to disagree. Its probably one of the lowest quality sausages out there, from a meat/processed point of view. I mean just smell your farts after a bratwurst..... Holy hell. lol

I saw a cook use this method years ago. He also slid each sausage onto a skewer before frying to keep them nice and straight which resulted in a nice even golden brown colour all around each sausage 👍

You will live to a ripe old age. Views and studies are changing with research. A high fat 70% diet, 5% carbs and 25 % protein is the latest. Completely opposite to what all have been taught and believe. If your fat, your weight will fall off you rapidly without exercise.

I spent a long time in Australia where local butchers competed to make the best sausages they could possibly make, as a result I have tasted some awesome sausages, but don't go to the supermarket, get to the local butchers, well worth it for great ingredients, I really miss those sausages!

This has always made a huge amount of sense. You can upscale this with a whole chicken in a slow cooker and then 10-15 minutes in an oven. Same theory. It's not only a no brainer, it's great

I usually have slowly simmered the sausages but this takes a long time. This method cooks them faster and I see no down side! I am going to definitely try it.

My Dad always put in enough water to boil them, and then the water would naturally cook off, and leave the pan dry, and then he'd pour oil in, he never had to remove the sausages, dump out the water etc..

I've been doing them that way for a very long time. My mom always did them that way and they always came out juicy inside with that good 'snap' when biting into them. I changed it up a bit, I like boiling them first and throwing them on a grill for that added smoky, grilled flavor. the skins may split a little but I don't care, the flavor is worth it.

I do something similar but I love the sear you get from a cast-iron skillet. After I get rid of the boiling water I put in a bit of bacon fat in the cast-iron skillet. Not too much and then sear on both sides.

LOL, I was taught to steam them, covered, in the pan on low then remove lid, boil off any remaining water and brown. It takes a few times to judge the water quantity but the results are great :)

Used a similar recipe for Bratwurst last night. Cooked in beer, onions and bay leaf, then dredged in flour mixed with salt and pepper. Back in the pan with some oil. Turned out surprisingly well: a brown crust and juicy insides!

Living here in Spain I missed having English style sausages until a few months ago when I found out about a place in Fuengirola that sells all types of sausages etc online. Since then I've had them every other night, burnt to s crisp and black💗. I'm going to try this method next time!

Fry them in a little oil. Use the small gas ring - on medium - but have a lid on the pan. Turn them after they start to brown, get all sides brown. Turn off the gas but leave the lid on. Come back fifteen minutes later and they'll be cooked right through. Simply reheat when you need them. Saves faffing.

I'd say, nothing to beat it... Cos, when I do this way of cookin. It does bring tears to my eyes... Cos, I miss her much and everything always turned out delicious....never in a hurry...hah. I have been using a heavy skillet for this method. I place the sausages in a cold skillet, fill with water to just cover them and boil until the water has all evaporated. Leave them in the skillet and add about 1/8 inch of oil and brown to the desired color. During the last few minutes, I add onions rings and peppers, garlic, and a dash of any good Worcestershire sauce. Cook until the onions are translucent and the peppers wilt slightly. Delicious... enjoy.

Lee & Perrin's is the only true Worcestershire sauce (they invented the stuff, by accident as it happens), just use that and your taste buds will thank you. It's made from fermented anchovies and spices so it's naturally loaded with MSG which means a splash in any savoury sauce will increase it's tastiness automatically.

I do same thing here in America I’m from Pittsburgh however only slightly different; I put water in pan enough to a level even with sausage slowly cook constantly turning until water evaporates then leave sausage in pan to slightly brown on all sides. Only difference is less water cook sausage until water evaporates then brown

The only problem I have with the boiling method is that the skins sometimes peel off. To avoid this I bring a large pot of water to the boil, turn the heat off and then put in the sausages, cover with a lid and leave for 10 minutes (with the heat still off). You can then bake or fry the sausage to finish it off.

I have never boiled a brat in my life and have never had them raw in the middle. Even only using a grill I have never had raw in the middle and burnt on the outside. Low heat slow cook on a grill equal amazing flavor and juicy brat or sausage. Seem counter productive to boil them which remove fat and flavor then to cook them in oil when on the grill you utilize the natural fat in the sausage for flavor and juiciness.

I'm've always made them this way. If you slice them into medallions just before ready and fry them a bit more, you can mix a bit of tomato sauce with them and put them onto a bun with fried peppers and onions for a great sandwich. You can also put the medallions onto pizza, into spaghetti, into soup, stew, or rice.

Another idea that I use is to add the cooked medallions into My stir fry veggies in the pan near the end of the cooking & then add any of the stir fry or simmer sauces that I like, I usually use sweet & sour or honey sesame & garlic sauce but people can use which ever sauces they like even some of the home made sauces are good too & if the sauce is still a little bit too watery or thin when I'm almost finished cooking, I just thicken it up with a heaped teaspoon of corn flour, or corn starch as it's called in some countries, or plain flour works just as well too, just sprinkle it in & mix it in well for a couple of minutes until it all disappears, if I'm using thick sausages I cut the medallions in half, that makes them go even further, this is also good with other meats too not just sausages, I usually use my secret ingredient instead of the corn flour & I think that it works even better & that ingredient is, a heaped teaspoon of vanilla custard powder, to thicken the liquid up with & it gives the whole dish a slightly pleasant vanilla flavour, once again, miix it in well & then turn the heat down to a low simmer with the lid on the pan for the last 10 minutes, when everything is done turn off the heat & fold in some green spinach leaf, the retained heat will cook them just right & last but not least drizzle a little bit of olive oil & manuka honey in a crisscross pattern over the top just before plating it all up, ordinary honey works just as well too, you can thicken soups & stews with the flour or vanilla custard powder too.I hope some people read this & try it & enjoy it, I don't think that they will be disappointed, I usually have fried rice or some of the different types noodles as a side dish with it as well, I live on My own so most of the time, whatever I cook, I usually get 2 or 3 meals out of it, oh well all this talk about food is making Me hungry so I guess it's time to go & start cooking some dinner again.

Excellent method...!! I cook my snags internally with the microwave first before browning. Also, really dense sausages can be 'butterflied' by cutting them end to end.. Internal heating/cooling befare browning is excellent advice.. Cheers.

I do them in a similiar way with half pan of water boiling the sausage, however, i either take sausage out and reduce the water to get rid some of water by heating then put sausage back in and cooking them until brown or I dont take sausage out of pan at all, heat water until its gone, and continue to cook sausage until brown.

I use the boil-and-burn method all the time. Except that I throw them on the gas grill to brown. Doing it that way enables me to turn the sausages in four positions for a more pleasing appearance. Nice video... Thanks much!!!

My Italian mother did it differently. She would brown the sausages first, then place them in her sauce. After slow cooking the sauce the sausages would be completely done and taste wonderful. For leftover sausage, you could place them in a roll with a little sauce and voila a great second meal.

I have used this boiling method of traditional English "Bangers & Mash" absolutely perfect result, after boiling my Lincolnshire,Cumberland,Wiltshire,Somerset English sausages totaling four, with horseradish potato mash, fried onion's, mushy peas , Onion Gravy made from all the juices.Superb result great meal for St Georges Day any day come to that. I use a similar method. I start with a steel skillet with an inch of boiling water. Toss the links in and roll frequently for even cooking. I let the water all boil away and then continue to sear the sausages until the level of browness I prefer.

Ha! I always cooked mine this way, had many people say I was taking the flavor out by boiling them. But when they would cook them they always used a fork to flip them therefore poking holes in the casing.

I agree this is one of the best ways to cook sausages. It's guaranteed they're cooked properly inside and it prevents burning on the outside or having the casing split open due to the excess heat and scorching.

You don't need to dry them off, they'll dry by themselves in a minute or so while you're getting pan hot with the oil. I use butter or bacon grease myself. Also, I poke a couple of holes in them before boiling so they don't pop.

Holy shit. I've just tried this method and it works like a dream. Tried it with some posh Tesco finest cheddar ale and mustard sausages and I'm currently inhaling them as I write this. I used to overcook them as well. This video saved my sausage game.
