Great video! Super informative! I have had two top sirloin caps sitting in my freezer from my ButcherBox but had no idea what to do with them. I made this recipe last night with one of them. Wow! Unbelievably delicious! So much flavor and SUPER tender! And very easy to make! Husband requested this to be a regular for dinner. Thanks for the awesome content!

What a blessing this #InstructionalVideo is ! First #SirloinCap I cooked I did it like a roast in the instant pot and the #GrassFedMeat was super delicious and fall apart tender yet that fat wasn’t utilized properly that way. Now, I know better ✅

He said take it out at 120* & it will carryover +5* then about a minute later he states he pulled it from oven at 110* ?? which is correct for med/rare?

I enjoyed watching this video. I learned a lot. I do want to point out some inconsistencies, though. Before you put the roast in the oven you say you will roast it until it’s 120 degrees. After you take it out you say you let it stay in the oven until it was 110 degrees. I get that the roast will rise in temperature after it comes out, but I don’t think it will increase by 15 degrees, so the 120 degrees makes more sense. Then the brief written instructions say to take it out when it hits 125 degrees. A link to the full recipe, that has been edited to avoid inconsistencies would be nice. I search the website and I don’t find one, though.

Because it will continue to cook and rise in temperature after you pull it out of the oven, so he pulled it out sooner as to not overcook it.

I got my order yesterday All beef box But half my meats are busted out of their package. Of course they had no seal I don’t understand why the packaging is all torn off like this

That was the problem I had with BB as well - I would immediately transfer to my freezer but many times once I put in the fridge to defrost I found they were not sealed and would either leak blood everywhere or get freezer burn where there was a hole in the package.

Salt with a salt cellar instead - this gives you a better idea of how much salt you’re applying because you can actually feel and see the salt rather than just see it coming from a grinder. A grinder is good for pepper to get that fresh cracked pepper taste.

Hi, thanks for the video, very useful. However (dating myself), due to the current coronavirus emergency, I had the opportunity to shop at Restaurant Depot, and, among other things, came across the coulotte steak, choice, 2 packed together for 6.32 lbs is what I bought. So each weighs about 3lb. But, each has a very thick fat cap. Maybe an inch or more. Should I trim this down at all and if so how much? I see yours looks not nearly so thick.

I'd skip the acidity and use wine. But when in doubt bouilloin/broth is the one ingredient you can never go wrong with.

However I feel about your grammar, I do love your cooking. I learned to cook steaks on a cast iron skillet, very, very hot, salted, no oil. I dare you to try it. If you do it right, when your steak is done the skillet will still be dry, because all the juice will still be in the steak. The only problem with this method, which produces a really delicious steak, is that there is no sauce. The sauce is still in the meat.

Coconut oil refined would be a good choice. Ghee might work. Nothing wrong either with reducing the searing heat a little bit.

Only yankees can think of a recipe that has animal fat, vegetal fat, and dairy fat... Dont ever waste a top sirloin cap like that. All you need is charcoals one skewer or grill and seasalt. Save your "creativity" to other cuts that need it. As long as there are no flames, the charcoal is just at that orange glow and there is plenty of smoke, you will get the perfect sirloin top cap.

Do a little research before spreading bs, Chimichurri is used in Argentina and Uruguay en.wikipedia.org/wiki/Chimichurri , so it is mostly used in the southern tip of South America. The meat didn't turn out to be medium rare. Despite all I liked the video and there is potential.
