Akara is a local dish in The Gambia prepared with beans, salt and pepper. It is referred to as the African bean fritters by many because of the similarity in preparation. The recipe originated from Nigeria and Ghana. Akara serves as a breakfast recipe as well as street food in The Gambia.
Akara is made of beans. Different types of beans are used to prepare it, but the most common is black-eyed beans, which need to be peeled. Ladies use two methods to peel the beans. One is to soak it overnight to allow the skin to be removed easily by peeling it with hands one by one.
