Awesome! All I needed to know is, "double left click" finishes the line. I tried that and it didn't work the first time, so I spent the last 40 minutes watching videos on google and trying a million ways to stop it. I watched just a few seconds of your video to learn what I needed to know. Thanks!

Thanks for the comment! You need to turn on dynamic constraints. Find your scale bar where it says for example “1:1200”. Next to this should be several ICONs- snapping, grid, constraints, inference. Click constraints and it should highlight. This will allow you to see the dimensions. Here is a blog on this and one that allows you to see dimensions by adding them directly. community.esri.com/t5/arcgis-pro-questions/show-line-dimensions-while-editing/td-p/1028179 pro.arcgis.com/en/pro-app/latest/help/mapping/text/display-dimensions.htm
