Started brewing this at the beginning of Feb, bottled nearly 3 weeks ago. Sampled for the first time last night, SO IMPRESSED! I think this will be a regular go-to brew for me. Would love to hear more recommendations for customising hops and yeasts with other kits. Thank you!

I would agree on the current kit level of excellence comments. Drinking the MJ Kveik IPA started 9 days ago and if it was poured in a pub, I'd be back at the bar pronto. Bonkers tasty.

Loving the idea of those spectrum things. I brew extract and all grain because as your say, the kits these days are fantastic. I sometimes change up the yeast too because yeah, it makes a surprising difference too! I'll be looking into the spectrum thingys. Interesting with the yeast in a stout kit.... Mind blown there.

For the variation, did you use both kit hops and the additional hop extract/oil?

Yes, Spectrum works best with a small amount of pellets as well in the Dry Hop

Thanks James. I made the same Juicy IPA kit a month ago following the Mangrove Jacks instructions, adding hops after fermentation on day 7 and bottled on day 14 adding some dried malt extract DME. The beer now has a strong diacetyl taste. Just today I've started another Mangrove Jacks kit. I intend to follow your process in the video and monitor the fermentation for up to 10 days, then cool to 14C before adding hops.I plan to remove the hops after 2 days and will try crashing temperature down to 5C for 2 days to clear the beer. I will then add a reduced amount of DME to the cold beer and bottle. How long do I leave the bottles for secondary fermentation and where, in a warm place or cold place? Just a quick reply would be appreciated. I want to experiment with crashing in order to go on to add extra hops in future and to have the hoppy haziness drop out before bottling. Thanks for your ideas for customising a kit.

Hey Paul! Diac is a nightmare to try and avoid, extended fermentation time and ramping the temp up a few degrees at the end of fermentation can help a lot. The issue may still occur when you bottle though, especially with hoppy beers as you get hop creep plus the re-fermentation for the CO2 you wish for. My advice would be to bottle and condition at room temp but don’t rush to try the beer, you may find the Diac will reduce with a little more time. Ultimately the best option is to keg, force carb with CO2 and serve and/or bottle from the keg. This limits the period of time when the Diac can re-occur and you’re not doing a secondary fermentation. Hope that helps!

Can you remember what your final gravity reading was? I think Mangroves original recipe says target of 1.010. I'm just at 1.018 after 9 days following this altered recipe. Going to recheck in 48 hours, but just wondered

I think it got down to about 1.010 and there isn't much reason why it would differ. The Verdant IPA yeast can be a little sluggish towards the end of fermentation at times, if you are fermenting at a controlled temperature then bump that up a few degrees and give the FV a swirl, gently. Just to rouse the yeast from the bottom

Depends what we’re brewing, for this we wanted to keep it simple and see how the beers would end up for most brewing these kind of kits at home so we used tap water. We did however add Sodium metabisulphite to remove the chlorine.

Not with this strain, some do call for two or to make a starter 👍🏻

@Rab dosing rate for this yeast is from 0.5 to 1g per litre. Lower gravity beers, up to around 1050, you can use one sachet. Over that and you may wish to use 2. Does that help?
