hi judi! thanks for the tutorial! i love jicama, but it's not always available where i live. if i wanted to store it long term, do you think freezing or dehydrating it be good? which is better, if either?

Hi! That's an excellent question! Nutritionally speaking, I'm not sure if one method (drying vs freezing) is any better than the other. It seems that whichever way you choose to preserve your jicama depends on how you intend to use it in the long run. When frozen and thawed, of course it will not have the same texture as when it was fresh. Anything like that will be mushy in texture after being frozen and thawed. Cooked jicama makes a nice substitution for mashed potatoes. If that sounds appealing to you, then freezing it may be a good option. You could also add the frozen/thawed jicama to soups and stews, and even a stir-fry, with the understanding that the texture may not be what you're expecting. If those don't sound like good options to you, then dehydrating it may be the way to go. Jicama chips actually sound inviting to me and may be a good added crunch to salads or used as a crunchy side to a sandwich. The chips could also simply be used to snack on. If that sounds inviting, then dry them. Because of their texture when fresh, I would be sure to slice them very thin before dehydrating. Otherwise, as dried chips they may be tough to chew. I admit that I've never dehydrated jicama, but from having dried a lot of fruits and veggies, I can assume that toughness would be the case if they are not sliced very thin. I hope this helps! I have stored jicama in glass containers with plastic lids and it worked perfectly fine! So I don't see why jars wouldn't work :) Enjoy! Thanks for watching and asking :)

It's also good to have it cut into those strips like you did before you cut into smaller cubes, but have it with lemon juice and the Mexican called: Tajin or make your own- dehydrated lemon powder, sea salt and chili pepper flakes, all finely ground up together. Or just eat it plain. It works.

have you any tips for storing whole jicama over winter?

Hi Richard! That's an excellent question. The best I can come up with is to keep whole jicama dry, unwrapped, and in a cool temperature, in the upper 50's F. At best, it may keep for up to 4 months that way, if it is very fresh to start with. I hope this helps! Thanks for watching and asking :)
