I've been using a Chinese chef's knife for about a year and still feel like a nube. These cutting videos are really helpful. The knife makes the food take different shapes from a western knife. If you feel like doing a video on using the different parts of the blade, especially the tip, that would be great.

I find pleasure in learning all the fine points you explain . . . especially making those five cuts as you spin the whole head. I eat the round coins from the stalk raw with a little toasted sesame oil and some soy sauce. It is so good that when I go shopping I look for extra stalks.

I'm so delighted he used the whole of the broccoli. My father grew his own stuff, things like the cabbage like tops of brussel spouts plants and leaves of beetroot plants were all used.

wow, I've be cutting broccoli for years and never had any idea how many mistakes I was making! lol ... never knew I should peel the stalk, for example. Also nice to see how to cut down on the mess of the florets breaking up.
