In the keto world… daikon contains about 1 gram carbs per cup! So enjoy. Process chunks of daikon into rice like pieces in your food processor. As tiny as you can get. Boil in salted water as you would rice until tender. Drain. Add butter and salt and black pepper. For delicious keto rice…. So much better than cauliflower rice! Milder. No cabbage taste. In stews chunks of daikon replace potatoes. Nice big chunks! So satisfying. Sliced into French fries and fried until golden and sprinkled with seasoning salt makes French fries. Sliced 1/2 inches thick. Toss lightly in extra virgin olive oil and Montreal steak spice and roast at 350F until golden and fork tender…. An amazing side dish for roast or steak! Or, do not forget. Slice into 1/2” thick rounds and eat fresh and crisp and light crunchy radish! Stay safe😷 Gladys, Toronto🇨🇦 P.S. I loved your recipe. I am going to prepare it this week!

I grew up with this soup!! Glad you’re enjoying it. Always love how light and savory it is. One thing I might suggest is using a fattier cut like pork rib & add a dash of ground white pepper to the soup. You can also swap the daikon with jicama if you prefer a sweeter profile. Stay safe and keep up the awesome videos 🙂

I knew you were a great gardener, now you're proving to be a great chef as well. My favorite daikon recipe is to grate these and mix it with yogurt and salt. The yogurt mellows down the pungency of the radish (which is already low for a daikon).

Loved hearing the crunch, crunch, crunch as you munched on the Daikon Salad Scott,😂and the way you savored the Daikon Pork Soup telling us the texture of the Daikon was almost like that of a potatoe, never tried Pork Broth, here in Mexico people go more for Chicken or Beef broth, but hearing of the mild flavor of the broth, with the soft spud-like texture of the Daikon, eatened with the white rice and the tender pork, these 2 recipes are a must try pronto! Thanks for sharing Scott, Buen Provecho 👍and greetings 👋from Querétaro! 🤠

Scott, I’m from New Orleans, so I come by my .. uh.. visual references from bad Mardi Gras or other parade influences… For the St Paddy’s parades, women string together an Irish potato, a carrot, and another matching Irish potato. These necklaces (if you will) are popular with women in the crowd. (Ahem!…..). These are also popular in the St Joseph’s day parades. Well! I’m just So GLAD that daikon radishes are not a popular part of New Orleans cuisine-///-you could get seriously hurt if one of those big things was thrown to you from a float in a parade! I have never seen one before !!!!! And, knowing my community, the ladies would love to give out daikon to the crowd…. I really don’t know if I’d eat one.

Spicy though it may be when you eat it raw daikon radish it is fine for people with IBS. I peel it twice as advised by a Chinese chef who said the outside layer is bitter. Then cut the daikon down the center lengthwise and then into quarters. Now cut the quarters into pieces as thick as you like (about 1/4 inch is good). The amazing thing is you can put these small pieces in a large covered container covered with water and there they sit at your beck & call for a good week. Change the water every few days to keep it appetizing. I take a handful at a time and eat raw, or toss in a collection of steamed vegetables (steam the hard ones longer than soft ones).

I don’t care fir radishes but haven’t tried daikon radishes. Well at least I didn’t realize it. I’ve likely had it in the orientalist foods I’ve had. I bought daikon seeds last year though. I just like how fast they grow and thought about giving them a try. I unfortunately didn’t get around to planting any garden last year. Hopefully this year I will. I would recommend to slice up the pork in thinner strips and then sauté them with the garlic in oil, preferably toasted sesame oil, then proceed with the boiling of the radishes like in the recipe with a bit of raw pork to get the oil and flavor in the broth. Add the sautéed pork only at the end to get it hot through. I think it will make a better texture for the pork. You can even add a bit of the hot oil once served in your bowl for extra flavor. Ooh ...and maybe just a spin on these same ingredients: slice up the pork in strips, slightly coat in the hot red pepper and then slice similarly the daikon and onion and sauté after the pork is cooked. Again I would recommend toasted sesame oil. Okay maybe I should go find a daikon in the grocery store. Lol. I am inspired.
