I landed here because I was thinking..hmmm couldn't I eat the old Scoby?. Then I was thinking that since people make leather from it, hey couldn't we actually cook it? Like fry it or sauteed it as meat replacement?

I cut my extra scoby's into small pieces,put it in small bottles and top the bottle up with any extra Kombu tea that I have.That way,I have a nice Nata de Coco kind of beverage..and yea,it's super high in fibre and even protein

You eat the top part and keep the lower part in the jar to make more kombucha.

@@nielsf no, the bottom part is the old part that you typically get rid of every new batch. That is what he is eating here instead of throwing it away. The top part is the fresh, new scoby that you keep to make your next batch

Dude. This person want to eat the scoby. That means, it will be gone forever. So it doesnt matter if he use metal cutlery. He will kill it anyway.
