Fold the edges for your Special Quesadilla before deep frying. Use raw (uncooked) tortillas and 1/3 cup shredded Monterey Jack Cheese. I use water on the fingers, sometimes beaten egg white to moisten the inside edges of the quesadilla. Simply press the edges together firmly and fold the triangles over starting at a corner to make a pleasing rope-like design.
