He really didn't explain the writing on a cake very well. You need to apply pressure and release pressure at the right moments to get your letters to STICK to the cake surface

@@biazacha its a difficult question because the problem is if you are using double cream it will be fine but things like butter cream might be different the must important thing is to try it out and adjust to the brand and type of sweetener you have. Try canderel they have and icing sugar alternatives that is meant to be 1 to 1 and performe the same. My preference is dobles cream with mascrepone to stabilize it. If you mean the cake itself that is dependent on recipe and adjustments depending on preference but it can be very very similar .

0:26 Cakes should look delicious first... That is exactly why I have a strong dislike of a lot of american cakes and confections. Cakes should taste good first. Not look good. If i want a wedding cake I expect it to taste good. Cakes and pies and tarts are more oftwn then not a if not the centerpiece at a party. If it doesn't taste good that is what the guests will remember. Not the look because mayby that's what they wanted the cake to look like. But the cake is what you will remember. If I bake a cake I don't bake it because it looks good but because I like the taste of it. I am a confectioner in training in a well known Café in Germany. There once per month a trainee introduces a cake they want to make and the first thing we concentrate in is the taste and how we can bring out the best if that specific flavour combination. The decoration is the planned to compliment that. I really don't understand how the typicall american fristing consists of nothing but butter and powdered sugar from what I have found. (I may be wrong about that though. I don't really know what the frosting you guys can buy in the supermarket is made out of.. .) Butter and sugar is nothing but sweet... But feel free to correct me on that. The more I learn the better for me.

honestly you have it right on the money, at least concerning american cake. the cakes here are just 99% sugar and taste like it, at least in my experience. I don't usually get to eat nice cakes though.

@@mudkipclove then why not try to make one yourself. You could use a german buttercreme ore try a french or italian one. Depending in the flavour you want you can and should use different buttercremes. Try not to use whole cake bases but slice them. For example a biskuit base depending on the thickness of the base and the thickness you want/need you can get up to five bases of a decent thickness out of one base. Also the filling to cake base thicknes ratio gets way better. That is why the traditional Black Forest Cake has three thin bases. You simply get more bang for your buck. If you want to I can send you an easy recipe.

I place my cake into the freezer for just a bit before I crumb coat. And I thin some of my buttercream just a little with milk or cream so that it spreads easily with a light touch. Then I pop the cake into the refrigerator until I’m ready to frost it.

To be honest, these American style/cream cheese frostings feel like concentrated heart attack slathered on as generously as this. Like there's maybe should be a teaspoon of it on a slice of cake, at most? I'd rather go for a much lighter merengue/cream fraiche-based frosting, or a thin chocolate/fruit/sugar glaze myself. But I can't deny it, all of these look so very pretty.

I'm not a fan of frosting either. I prefer layering with chocolate mousse. It requires a ring mold and a few hours of refrigeration, but you get flavor without overwhelming sweetness. It also looks neat to have thin, alternating layers of cake and mousse. If that looks too unfinished, you can pour a glaze over it.

@@jc3drums916 It doesn't work with every cake, but I'm a big fan of whipped ganache (dark chocolate-based with reduced sugar), as well. Though my go-to when baking coffee/chocolate cakes without occasion is just alternating thin layers of cake with ganache and some optional alcohol with just a dusting of confectionate sugar/cocoa powder on the topmost layer of cake. Maybe some fruit for making pretty.

I agree with you. I always wanted to try these buttercream recipes but it just looks really heavy and overly sweet. It does have a nice consistency for decorating though.

It’s actually very possible. Many cake artists on social media use “dummy cake” or styrofoam cylinders when frosting a cake to minimize waste and maximize content. It makes sense
