It's the fencepost problem. Three cuts divide the tortilla into four pieces. It sounds odd when counting it out but it's not a mistake.

Measurements and temperatures are extremely helpful for a general audience who wants to try this out, but the tips about cooking that you only really understand after doing it a few times really help a more specific audience who wants to learn to cook in general. Often they’re given as “life hacks” and seem to fail or be less effective because they don’t remind us of the importance of using as a tool and not a cheat or “hack”.

The oil temp doesn’t drop because the tortillas are cold, water phase change to steam is thermally extremely expensive. It takes 10x more energy to phase change 100 degree Celsius water to steam as it does to take 0 degree water to 100. That’s also why ice works so well and whisky stones don’t. It’s the *phase change* that changes the temp most drastically.
