The average person doesn't eat like a Texan. Especially if that person is eating a balanced meal. Some people's body can't handle reduction in meals eaten in a day and actually can get sick, they essentially cannot adapt to situations when food gets scarce though.

Having been around sortedfood for 8 years has taught me so much about cooking that I just attempted to make a dish using beef and mushrooms for the first time and it turned out surprisingly well. My level used to be at around frying eggs and I never even dared to go near meats(afraid it would be a costly mistake) but the accumulated knowledge I gained from this channel has given me the bravery to experiment in the kitchen. I'd like to thank sorted for helping me escape my "fry everything" phase especially when I'm home alone.

My dad is a huge red meat lover and he’s always used the cheap cuts and made them delicious with exactly the methods there. He also recommends making sure you always cut against the grain when slicing up bites for a tender cut.

I have to say guys..... The gadget and pretentious ingredient videos are fun. So are cooking battles and stuff. But videos like these is where Sorted started, and I still love these the most!! More videos where you are simply cooking good food and showing us how, without any hooks/angles/gimmicks/competitions.!!!!

For U.S. viewers: if you’re shelling out for ribeye, make sure to go all the way and buy USDA Prime. If prime isn’t available, some vendors offer their own (non-USDA) premium cut (Kroger for example has “private select”). Just make sure the marbling is good (the more white, and the more dispersed through the red, the better!). Cuts like these rarely need added fat (olive oil or butter) though Ben’s technique gives you a wonderful pan sauce. I season mine with kosher salt, black pepper, garlic powder, and onion powder about an hour before cooking (dry brine) while it comes up to room temp.

I love bavette! I live in France and I always order it when I see it on the menu because they cook it pretty much exactly the way Ben did in this video and serve it with the same sides, plus a tasty sauce or garnish.

Tried this tonight for the first time - Steak, Mash, Steamed brocolli, and Peppercorn sauce (with some mushrooms and onions thrown in as well). I had never done a steak in a Pan (always on the BBQ but in -30deg C that is less than appealing), and never made a peppercorn sauce. simple instructions, and I had probably the best steak dinner I have had in AGES, certainly the best non-BBQ steak outside of restaurant. Absolutely love these types of videos with simple recipes, that don't have too many moving parts, one pan (other than the Mash) and a delicious meal at the end!

You could always make yourself a vat of cheap soup. Some water,ham, potatoes,celery,carrots,onions,salt, pepper,nutmeg,garlic,ginger (light on that one),and you have yourself a delicious soup for just a few dollars a vat.

you can also dry brine it, that way not only will it be tender but it will be seasoned all the way through with salt, so all you need to add is pepper, or whatever other spices you want to add. I use this method everytime i make inside round and it always come out tender and tasty.

@@ThePatrickis Lots of recipes out there sans wine, but easiest might be oil and garlic with your favourite herbs. A couple of glugs of oil, some crushed garlic, basil, rosemary, thyme, oregano, s & p.

Good suggestion. I mentioned cider or rice vinegar with honey or brown sugar to counter the extra acidity but I think your idea is better. Perhaps I would dilute it a little because the vinegar is more concentrated and more acidic than wine...

My boyfriend made the sauce and used your ribeye technique tonight for dinner ... 🤤 best steak he’s ever cooked and he really enjoyed doing it and for the sauce he used whisky as we don’t have brandy and bisto as we’d run out of beef stock cubes but still AMAZING! Thanks lads! Happy New year!

This is your best one yet!! I admit I half doubted Ben when he cooked the ribeye on medium heat but when it turned over that sear was perfection !! We eat a lot of bavette and onglet here and I don’t really care for it, miss my thick cuts of rib eye and tenderloin with a crusty sear 🥰

Bavette that I tenderized myself was my go-to weekend dinner for years and years, with fries and a pan sauce with aroma mushrooms. Simple, quick, and delicious. Personally I don't usually sit around with a lot of wine in my apartment even as a chef, but my choice for marinades is a mix of oil, soy sauce, worcestershire, garlic, rosemary and a squeeze of lemon. Adds more flavor in than wine, and definitely does the trick in terms of tenderizing tougher cuts.

Thank you, that was such a useful lesson, Ben. I buy beef filet when I want steak because otherwise I end up with a tough piece of meat, but that is so expensive and I am living off a pension. I have never been good at cooking meat or at making sauces, I’ll follow your instructions and hopefully improve. Thank you again.
