I have been baking for YEARS and never thought of this! There are much more complicated methods, but this is perfect for my purposes. I have just one springform pan, but need 2 cheesecakes. This is perfection- thank you SO much!

I know this video is a few years old and it may not seem like a big tip but I do 15-30 springform cakes a day in my restaurant. I've been using this tip from you for two years since I came across it. For 30 years I had cut the disks for all my pans in the morning. I showed my staff this trick and all them just starred. Not only does this save serious time, I no longer have to seal my wet batters ( i.e. cheesecake) with a foil wrap. Thank you, my friend!

That's the way I always do it, and I wondered if I was the only one. After I clamp it together I just take a pair of scissors and roughly trim off the excess. It doesn't matter if you leave some protruding around the edge. Another advantage, besides being quick and easy, is that you get a tighter seal because the paper is wedged in the crack between the base and side, so the pan is less apt to leak.

What a great idea! I always use parchment paper on the bottom of my springform pan but for some reason I still have trouble transferring it out to a cake board. This method gave me the idea to leave the excess paper hanging out so that I can easily grab onto it to lift my cake out. I'm going to try it this weekend.

Hi Skoggit, I will remember your way of lining the pan...I also made a cheesecake, it nealy ruined my pan. Because it caramelized that inner ridge where I could not open that pan for anything. My pan is now clean, functional, and ready for your way of lining the parchment paper. Thanks!

Thanks. Just got a spring form pan and my first try at a crustless quiche leaked out grossly and wouldn't set after I set it in a water bath. This is very intelligent AND easy... going to try it for my next attack.

Perfect. I'll bet I can use it to bake my regular pound cakes too. My old pan became lost and the only large pans I've found (large enough to hold my batter) were angel food cake pans, but my batter leaked through!
