I would rather use a filtration machine with filter powder (magnesium silicate) rather than a manual filtration, the results are far more satisfying. The oil gets much clear, has no bad odor, and fried foods are tastier and crunchy.

Although that is a great solution for your concept for us it does not work as nicely. We fry/cook hand cut meats to our fryers; thus blood gets into the oil. If we were only cooking frozen items that process would be ideal.

just curious does the oil stay in the fryers when the store is closed or do you drain it and store it in the fridge for the next day?

It can stay in the fryer. Due to its size it will take 4-6 hours to cool anyhow.

Our meats are cut/cubed. It’s our concept; therefor blood gets into our fryers. Can’t filter blood :).
