Amazing Chef Charlie. I've made homemade pie crust for over 30 years and never have I nor anyone that I have observed making pie crust used your simple technique of rolling the dough onto the rolling pin. (Nodding my head at the neat, way it rolled into the pie pan without any of the crust breaking away.) ❤

I appreciate the compliments. Wow that is awesome!!! To be honest it takes practice. I practiced for quite a few years in order to get it right. Before I used plastic wrap and rolled my dough onto the plastic wrap then I placed it over the pie pan. Now I have a different method. It's all about improving through success and failure.

You must have watched my old pie crust recipe. This one is just about the same. A few changes. Cold, solid ingredients instead of the room temperature butter and shortening like with my 2013 pie crust video. I use a food processor on this one. I didn't on my 2013 video!

Merry Christmas Charlie! Can the dough be refrigerated overnight & then placed in the freezer for an hour. Or does it have to be done together , same day? Also can the dough be used in a rectangle pan?

Hello Marlee. The pie crust in my opinion doesn't need to be blind baked unless your making a more delicate pie like a lemon meringue pie. Yes you can skip the method you mentioned. You're welcome, not a problem. Let me know how it turns out. Thanks!

@@CharlieTheCookAndrews Hi Charlie, the pies turned out swell. I made two. The top crust turned out darker than I would've liked but it was still edible. I wish I could show you pictures. It was cooked all the way through even the bottom crust turned out well. This is my first time making sweet potato pie at all Charlie, and your recipe was amazing. I was going to crimp the edges but ended up forking it in the end. Everyone who ate it loved the spices, and they loved that it wasnt overpowered with sugar 😉

Better to bake it when it's frozen. Bakes even and the crust stays intact during the baking process. Hope this helps!

Hey there. Happy to hear that you enjoy my channel. The answer really depends on the type of pie you are baking. For majority of the pies the crust should be made and frozen prior to baking. Dark coated pans will work. Hope this helps. Thanks!

Thanks, Charlie. I’ve looked at other recipes, but the one I liked did not have enough flour to cover the pie pan. I’ll try this right away (but I cut the butter by hand since I don’t have a food processor). BTW, do you have instructions for fully baking the pie crust? (One week later). I don’t have a food processor so I cut everything in with a pastry knife. This crust got rave reviews with my friends.

The hardest part of the pie for me is making the pie crust. It's either too thick or too thin and usually tastes like cardboard. I have considered using cardboard but my arthritic hands scream the whole time! Lol lol. In order to pick up some extra cash you could make these crusts for friends (or the whole pie) for price and get rewarded for your talent! Happy Holidays and many blessings to you!

I'm going to give your recipe a try. I have a ? Have you ever made pie crust with oil , no shortening. My mother use to make the flakiest pie crust using oil. Much to my disappoint I couldn't find her recipe after her passing.

So if we are making your sweet potato pie, we need to make this, freeze it, and then use it? Is it safe to use the frozen glass pie dish straight into the oven from the freezer, or should I take the pie crust out of the freezer as I start making my filling? Thanks for the help Charlie!

Yes absolutely. Once the crust is frozen, leave it in the freezer until after you make the filling. It is safe to add this straight into the oven. Hope this helps. You're welcome, not a problem.

Flouring both sides of the dough while rolling it out prevents this. Also make sure the dough is kneaded well. Hope this helps. You're welcome!

You'll have to use a pastry cutter. If you don't have that you may need to buy the store made crust and go from there! Hope this helps. Thanks!
