Here in the Philippines, our mocha cakes are more coffee-ish than chocolatey... so the cake comes out of the oven just a bit deep beige in color and it smells like a sweet cup of mocha 😊👍🏼

I made this cake two times already and it is delish, thanx John you rock! You can also make ur own buttermilk by adding 2tbsp of vinegar or lemon juice to 1 cup of milk...mix and let sit for 15 min!

I came across this channel a couple of weeks ago when you explained the use of the baking strips and how it affects your cake and keeping it level. You used the foil and paper towels to explain it. Wow.... .I tried it and it worked perfectly. Since then I've ordered the baking strips online and now I'm an avid viewer if your channel. Sometimes I watch one recipe over and over. Your method to cake making looks so easy and I do agree when you say, you're a messy Baker. LoL Your cake creations are beautiful and stunning. Keep up the wonderful work.

Just made this cake today! I've been picking away at the scraps that I cut off. It's so good and so moist too! No simple syrup needed. Did a really strong brew of coffee for this and used my best cocoa powder. This cake has turned out wonderfully. I have raspberry flavored buttercream in between my cake layers and as my crumb coat. Doing a raspberry whipped cream outside. It's going to taste so good once done! Can't wait!

So here’s my review: MOISTEST CHOCOLATE CAKE EVER!!! I was really surprised by how moist it is, but then I realised it has a very small amount of flour. I don’t have buttermilk, so I mixed whole fat milk with apple cider vinegar. I also didn’t use kosher salt, just used regular. I was kinda scared cause the batter was very runny, but once I saw it rising in the oven, I got excited. I made the mistake of using three 6 inch pans. Next time I’ll use three 8 inch pans. Only complaint I have: too sweet. I’ll have to reduce the sugar amount the next time. I’m surprised by how easy it was for you to frost it, cause my layers were so fragile they were moving everywhere. I was scared of the cake falling down. Nevertheless, THANK YOU SO MUCH FOR THE RECIPE. I’m definitely using it again for my bf’s graduation party, and I’ll take all the credit for the recipe if anyone asks 🤣🤣🤣 #jk

@@Litllemissinperfect 1 cup buttermilk and half cup sour cream or yogurt. the sugar was a little too much for me so after trying the cake three times and reducing the sugar every time I found 2 cups of sugar work best for me.

Im a big coffee cake fan and I thought I should give a try to your recipe. Instead of making 3 layer cake, I made a two layer cake and 12 cupcakes. Everyone loved it. The only struggle I had was with ganache. Mine was way too liquidi. May be because I used the dark chocolate coins to make it. I’m not sure but overall I’m very pleased with the outcome. Love your baking tips. I ordered the baking strips from Amazon and bought powdered buttermilk. Thanks for sharing your wonderful recipe.

Has anyone else noticed some of the discrepancies in this recipe? For example 3 cups of flour don’t weigh 342 g…? Also the printed version vs. the video version are quite different. 1/2 of a cup vs. one cup of buttermilk, a cup and a quarter versus one and a half cups of coffee, and the addition of a half a cup of water in the printed recipe. Not to mention the vanilla is totally left out in the printed recipe as well. I absolutely adore preppy kitchen and have learned so much from John. I just want to make this cake as good as it can be!

Hi John, just FYI you can totally freeze buttermilk. Measure out the amount you need and put in freezer bags. Date, amount, lay flat on a baking sheet and put in freezer til frozen😊❤️

I made this recipe and it turned out great. I used 1/4 cup mayonnaise and 1/4 cup milk as a substitute for sour cream, and it worked perfectly. I used espresso Swiss meringue buttercream and it was fantastic! Thank you!

Lovely recipe.. Thanks for sharing this. I used 1 cup of yogurt instead because I could not get buttermilk. I made a mistake though and added an extra quarter cup of coffee. Cake turned out lovely for my wife's birthday. Guess what, I covered the cake with your Italian Buttercream recipe and flavoured it with salted caramel. It was all too sweet but I would think the recipe you have suggested would have been better. Thank you so much as you are so inspiring!

The recipe calls for 2 lbs of confection sugar ( for the butter cream). I don't know if anyone noticed, 2 lbs sugar is a lot, way too sweet. I realized it while making the butter cream and tried to cut 1/3 off of the confection sugar. Despite the cut, it came out still extremely sweet. Other than that, the recipe is easy and very good. I wonder if John has made a mistake in the ingredients listing in the weblink listed in the description?

What brand vanilla extract do you use? Every time I have tried to make a homemade buttercream frosting, it just has a funny taste to it so I may be wrong but I'm thinking it's the brand of extract I'm using? I thinks it's McCormick. I haven’t made this cake but if you hate the white cast on your cakes from the flour or get turned off by the taste then dusting with cocoa powder is the best. It’s more expensive but I do it as I hate the flavor of the flour dusting.

So, I did a thing. I made a caramel mocha cake. I took the chocolate cake and mocha icing from this recipe (skipped the ganache), and combined it with the icing and caramel from John's caramel cake recipe. The mocha icing went on the top and sides while I put the caramel icing in between each layer, and did a caramel drip on top (I set aside some of the caramel before turning it into an icing). Served with toasted hazelnuts. It was **chef's kiss** divine.

@@sikandarsidhu928 hi... i checked on other of his recipes and the correct amount of sugar would be 533 gr.....if you wanna check by yourself, look for his ultimate chocolate cake recipe, uses same amount of sugar (2 2/3).

The recipe says 1 1/4 coffee but he used 1 1/2....it says 1/2 cup water, he didn't use it in the video...and the buttermilk, it says 1/2 cup, he used 1....now I'm confused

The water is for the buttermilk powder. He says he uses powder because the buttermilk expires quickly

you can make your own buttermilk just add a tbs spoon of white vinegar or lemon juice to a cup of milk let it set and your set

Your metric conversion is way off. 2 2/3 cups of sugar is A LOT more than 265g
