easy to do....get a rectangle piece of acetate (a firmer type of food grade plastic) and do diagonal lines one way, then the other direction, and then roll it in the shape of a tube and tape the plastic so it keeps the shape then cool and release....very simple

Maybe you are over baking? Cake kept in the fridge hardens a bit like butter but once u take it out , it should soften after sometime You can also add 1/4 cup of oil and 50 gms of butter instead of 100 gms of butter and add 1/4 cup of milk powder

Hmmm I suppose a lot of ppl do freeze the cakes but I have never done so. Yes there are professional freezers for freezing cakes But I think u can freeze them in your regular home fridge freezer too. But do try to make fresh as much as possible.

Can we use chocolate whipped cream to fill in between the layers? And then top of the cake too, then finally pour ganache? How can we store whipped cream?

You cannot store fresh dairy cream. But if you used whipping cream you have to store the left over cream in an air tight container in the freezer. When you want use it let it defrost and add a little more of unwipped cream and beat until it comes to the correct consistency.

Hi, I very recently started following your videos and I especially loved the different chocolate decoration techniques. I have a request for you and would appreciate if you can upload a video on the same. I want to learn the glazed mirror technique for cake decoration. Most of the videos I have seen use sweetened condensed milk . I would like to know if we can substitute sweetened condensed milk with heavy cream since the white chocolate that we use is anyway very sweet. Can you please upload a tutorial?
