Anpan
(Ingredients) 6 divisions
200 g bread flour
2 tablespoons sugar (20 g)
1/2 teaspoon salt (3 g)
2/3 teaspoon instant yeast (3g)
150 g hot water
10 g butter
240g sweet bean paste
1/3 whole egg
1 teaspoon sesames

Put butter in hot water and dissolve
Once the butter has melted, add to the ingredients and mix for 2 minutes.
Primary proving until doubled in size
Degas the dough and cut into 6 equal parts
Roll and let for 5 minutes
Push it by hand to let the dough air out,
Stretch it round so that the center becomes thicker
Wrap the sweet bean paste and proving it until it doubles.
Apply egg liquid to the surface and put sesame seeds on it.
Bake for 12 ~ 15 minutes in an oven preheated to 190C (375F).
