Made this cake yesterday. It was INSANELY good! I was intrigued by the whipping cream, and was blown away! (I didn't use any xanthan gum, but it still held together wonderfully) So good! I'll definitely be making this again :)

My dear Gretchen...the original Black forest Cake ( I've been living in this region of germany for many years) is made of Kirschwasser-Cream. You have to add (a lot) of Kirsch to the cream after whipping to soft peaks, then go ahead and whip to stiff peaks. This is absolutely important, because otherwise this is just a sort of choclate/Cherry cake with a hint of Kirsch inside. You have to taste Kirsch in AND outside! :-)

I actually did add kirsch to my whipped cream because I read that in some other recipes, but then it broke and turned into soup. No amount of whipping would make it stiff again. 😞 Were you using non-vegan cream from cow's milk, or a vegan cream? Maybe they act differently?

Finally got the hang of the whipping cream with temperature and consistency(this was my third time making it). My friends said that this is the best cake cream they've ever had! Oh my goodness chef! You and the videos are what brings life to the recipes and brings the family together. If people are telling you to be quiet then they obviously don’t want anything to do with it and don’t change your unique style of teaching for a group of haters that obviously have never even stood before a chef like we have in a professional learning environment for future chefs to be.

Made this for a friend's birthday last week, and it came out delicious! I used Becel plant-based whipping cream (which is indistinguishable from dairy whip!). The macerated cherries in kirsch were addictive and the choc cake was so fluffy, moist, and held structure very well. Thank you for this recipe and video!

How do you ever figure out how long or short to make your videos? That's an art in itself. To properly showcase your INCREDIBLE vegan recipe creations and visually present the final delicious product. I appreciate how you have to balance out enticing our brains to seek out other vid instructions (ie vegan whipping cream) if we need that info, while keeping our mouths watering.... Yum again

thankyou! It depends really on the recipe. Some of them just take longer to explain and show... but for this one I decided to cut out the lengthy part of the actual chocolate cake recipe because that one I have done over and again and it can be 5 minutes just in itself. I see the analytics and most people only get through about 3 minutes of my videos :(

@@GretchensVeganBakery Well not from me, I enjoy every second of your videos (if I find time, which I totally do not regret). 1st possible reason: The short Instagram/"Tasty"-video format trend which shows people quickly all steps or they just want to quickly enjoy the beauty of every cake process step. 2nd possible reason people just skip through 3mins: People don't have time but want to make your beautiful cake theyve seen on the thumbnail. But do not get discouraged plenty of us love your personal talking!!

Hello Gretchen! Wow!! Thank you for sharing these Jams with us!! I once had Real Jam when I was little & it was so different. I could see by the way you showed us the Jam , the real Cherries in the jar! I just came from your Banana Caramel Tarts and they had me thinking of a lovely tea party. Now I am convinced! These are so elegant, the chocolate mouse, the luscious Cherry Jam. Gorgeous. I need to set a Date with my 8 yr old niece!! ❤❤ PS-- Gretchen I feel so embarrassed 😳. Yes! The caramel banana tarts are sooooo good! I shared them with neighbors and their eyes were popping out of their heads! LOL I've been adding a Tbs of the Silda's Jam to my yogurt breakfast each morning! It's amazing!

Good old BlackForest Schwarzwälder Kirsch! I'm german so the first cake I ever baked had to be BlackForest and it looked horrible (uneven baked cake,whip cream melted all over,cherry pressed out the sides,liquid not soaking in,just so many beginner mistakes :'D) but it tasted wonderful and my lil sister loved it which kept me baking more... Thank you Gretchen for bringing back good memories from this delicious cake which looks very authentic! But typically you would make the chocolate cake with whipped egg method (I think you once teached me its called genoise :)), is this even possible to make vegan, is there a vegan substitute for the whipped eggwhite fluffyness? Well done it looks beautiful~~~

Hi gretchen may I not add the xanthum gum into the cream? Would it still be as stable and not melt too quick in room temp? So excited to finally find a vegan soy whipped cream recipe and I really want to try it out but xanthum gum is so expensive where I live...

yes! Just divide the batter between the two pans, bake time will be a few minutes less, check at 18-20 minutes

Nicely done 👍 I made a sheet version of this last week but froze my cake layers after basting them as it makes assembling much easier and less crummy plus you can cut up into 1/2 or 1/4 and freeze for a spectacular desert on a moment's notice. I asked keef cooks to make one and he did for me, it was a big hit in messages he sent me. How do you stabilise vegan cream?

I do not eat anything from can, because it's just not healthy. No matter how much I try to make whipping cream from fresh coconut it never works. The cream never hardens in the fridge.

Cherry juice would be the best if you can get that otherwise some other type of fruit juice that adds similar, good flavor to the cherries if you can’t get any of that water is the last option

The consistency of the batter(read from the recipe) is not the same as of this video. What might be the cause of that?

If you measure with cups versus using a scale, that would be the #1 culprit. You can measure 1 cup of flour 20 times over and get a different WEIGHT measure every time, which means every time you measure a cup of flour just by dipping it into the bag and scooping it out, you will get a different result. Hey Gretchen! I’ve used the whipped cream recipe a few times now and it tends to crack on the sides when I refrigerated the cake overnight. I’ve just kept some extra whipped cream to fill in the cracks the next morning, but do you know what I can do to prevent the cracking?

try not to overwhip it, I have found that when I DO overwhip though, adding in a bit more plant milk to thin it down will help!

If you drink coffee, make a little bit extra for this recipe. If you don't drink coffee, you can use instant granules (2 Tb mixed with 2cups hot water)

The cakes are looking amazing! Now making the whipping cream. I’m using miyokos recipe just because I was half cup short of refined coconut oil. I’ve made it with success in the past. Now just have to get the tempering of the chocolate right! So excited for this project 😊

yes the vegan whipped cream is very stable, of course it does still need to be refrigerated, but it will be fine for several hours out at room temp

I was looking at the recipe for the whipping cream and it says 2 cups soy with 2 cups of coconut oil. That seems like a lot of coconut oil. Have you tried a smaller amount or a different oil?

Yes I appreciate the feedback. I realize that there was a default setting on my recipes that was adding "recommended recipes" before the actual recipe which was confusing and added more "stuff" to sift through, So I am working to remove that from my recipes for a better user experience. I understand ads are a nightmare however it is the only way I make money to continue to share for free. Oh in re-reading your comment though I see what you meant, yes this is a feature that helps me as a creator get at least a penny or two on 1 ad for those that skip through ALL the ads. It does stop just before the recipe so you only have to scroll a centimeter rather than 2 feet! LOL :)
