As the Spring Festival is around the corner, I’m going to share my family’s New Year's Eve Dinner with all of you as what I did in the past 3 years. It took me almost half a month to finish this project, although it is far from perfection, I tried my best to present it, I hope you enjoy this video. Happy New Year to all.

Ingredients:
Pickled Tomato in sweet-scented osmanthus paste:
cherry tomatoes 250g
1tbsp of sweet-scented osmanthus paste
Suzhou Style Gigot Jelly:
gigot 500g
pork rind 300g
Green onion, ginger, a handful of peppercorn
green onion 15g, ginger 15g, a tsp of salt soy sauce 20g)
Stir-fried water fennel:
water fennel 400g
1tsp of sugar
salt 2g
3 cloves of garlic
scallion
green pepper
half a hot chili
Deep-Fried Prawn Topped with Wasabi and Mayo:
10 prawns
an egg yolk
salt and pepper
all purpose flour
corn starch
3tbsp of mayonnaise
lime juice
1tbsp of condensed milk
garlic powder
1tsp of Wasabi
a handful of pine nuts
Braised Rib Finger in Chu Hou Paste:
1kg of Intercostals Rib Fingers
3tbsp of Chu Hou Paste
1tbsp of peanut butter
1tbsp of preserved bean curd
half an green onion, ginger slices,
a star arinse, 4 pieces of bay leaves
2 dried chilis
half a cinnamon stick
3 cloves of garlic
one Daikon
rock sugar 15g
1tbsp of dark soy sauce
1tbsp of soy sauce
2tbsp of cooking wine
Steamed Mandarin Fish and Jinhua Ham:
A mandarin fish
Jinhua Huotui Slices
8 slices of ginger
3 cloves of garlic
scallion
a tsp of salt
3 tbsp of seasoned soy sauce for steamed fish
coriander
Fotiaoqiang:
For the stock:
half a chicken
chicken feet 300g
pork bone 400g
Crucian Carp
One Pork Knuckle
ginger slices
2 star arinse
3 pieces of bay leaves
beef tendon 300g
a slice of dried Whelk
6 Shiitake mushroom
7 dried shrimps
5 dried scallop
6 prawns
6 abalones
8 quail's eggs
6 Morel Mushroom
rock sugar 10~15g
1tbsp of soy sauce
1tsp of dark soy sauce
Steamed dumplings with mixed veggie stuffing:
Dumpling wrapper:
all purpose flour 150g
warm water 80g
For the stuffing:
ground pork 200g, chopped scallion and ginger
sugar 10g
salt 2g
2tbsp of soy sauce
thirteen spices
pepper
half a tbsp of dark soy sauce
egg white 50g
3 water chestnuts
minced shrimp 50g
chopped shrimp 50g
1tbsp of sesame seed oil
a handful of Black Fungus
2 eggs
half a carrot
a bunch of spinach
Boiled Glutinous Rice Balls in Fermented Glutinous Rice Soup:
8 glutinous rice balls
1tbsp of Fermented Glutinous Rice Soup
