Silicon cupcakes liners are the best! They don't get greasy, they're nonstick, and they don't leak dye into your cupcakes like colorful paper liners! Oh and your muffin tin won't get all greasey the way they do with paper liners. Annnd of course they're reusable.

Before watching Erin McDowell videos, I never, ever baked. Like, ever. I always just considered myself a cook, never a baker. She has completely changed my life in the kitchen. She is both such a pro and completely disarming, which is a rare combo. Like so many others, I'm so happy and shocked these videos are available to everyone for free. 🧁🧁🧁Proof of my changed life: I just made three pecan pies for the first time today!

I found you just before enrolling in culinary school and as I entered the pastry section I was able to reference your videos and I actually nailed the biscuit method because of your video with your dad! To prevent grease on the bottom of a cupcake liner, you can put a couple of grains of rice underneath them in the pan as they bake!

Is there a video on choosing icing to go with your cake? It would be wonderful to learn about what types of textures, flavors, etc. go well with each other when deciding how to ice your cake/cupcake! This was a lovely video, and i feel like this was the only thing it didn’t touch on!

OMG! I have been waiting for this! For some reason I have been having trouble with the texture of my cake/cupcakes. As always, Erin gives me the correct recipes and demos. I have watched other tutorials from other baker’s and learned NOTHING! I love her book “The book on pie”, but she needs to write more cookbooks for these “Bake it up a notch “😉 She is my guru

As a home baker, I find that it is so enjoyable to watch and learn new techniques. At 61, it's never to late to learn. Your techniques are clear and easy to do. Great video! The foaming method is by far the most common method used in Sweden, but we add the eggs and sugar together from the beginning then whisk on medium-high speed for 8-10 minutes! It makes the most delicious cupcakes and sponge cakes - definitely a technique I would recommend for light and fluffy cupcakes!

While I really enjoy Erin's videos, the youtube ads a f***ing annoying. Every 3 or 4 minutes they are kicking in, mid sentence, mid word!! WTF, Google?????!!!! What sort of algorithm are you using for ads, because they are just destroying the whole KZitem experience. Yes, you are trying to make us pay to remove the ads, but by annoying us like this you are pushing us away from the platform altogether! Anyway, question for Food52 and Erin -- do you post these videos to any other platform (like, say, Nebula) so that I can watch them and not have Google's greediness constantly destroying my enjoyment of them?

Another TOP NOTCH Video by my fav Erin, I always learn something new & I've been an avid home baker for over 50yrs. I thought the reverse creaming should only be used for certain more "sturdy" cakes/cupcakes & that you can't reverse chocolate cake is that true? I Iove you on F52 but I think the Food Network needs to make you an offer you can't refuse !!

This was my 1st time watching one of your videos and when I say I spend hours upon hours upon hours watching baking videos and this is one of the best I have seen. Pound cakes make amazing cupcakes. You leave the liners out, butter and flour the cup cake pan. Then everyone gets full coverage of crisp pound cake crust. Of course you do not icing them. You glaze them.

No mention of silicone muffin liners?! They are a GODSEND. Best of both the lined and unlined worlds. Even browning all the way around but not tough, gives a clean "handle" area to touch, removes completely clean, and are easy to wash and reuse!

Hi, sweet-spirited Jess! Sooo much to learn, and you really seem to have it down pat! It was extremely enlightening and fun to watch you, and I didn't think there was so much to cupcake decorating and design! You showed so many alternative ways to frost the cakes! I have a nifty one, you don't know about, though. My own little trick - in fact I ain't seen nobody do it yet! 😃 Somehow, I don't have confidence in the parchment for use as cupcake separators... To me, they still shift! And if you cut the paper tall, the icing will still get messed up? The safest bet is to chill the cakes first...What else you got by way of box design?

My cake was BEAUTIFUL. Most importantly it was structurally perfect, I did a beautiful crumb coat. I made a Russian buttercream which was DELICIOUS and my fat ass , really loved it lol. But I really have to practice on which icing will work best for decorating. So I Know which one I Will be watching next’
