looks lovely and yummy! a question - as I am not very keen on deep frying, can I bake them in oven? could produce similar crispy balls. if so, could you suggest temperature and tome?

Very nice ! Try using chic pea flour for your paste that's how it's done in Sicily . Your rice looked great

Looks wonderful! I know you were making picnic references to the cucumber sandwiches then at the end you mention eating these the next day. I was wondering if I make them the day ahead what cheese besides gorgonzola would be nice as a filling? Do I store them in the refrigerator overnight then serve chilled or room temperature? Will they still be crispy? Sorry to ask so many questions but these look really great to me and perfect for my Mom's 80th birthday next month. Thanks!

***** Thanks for your nice reply. Cooking ahead and serving room temperature is my best bet. I think most people in the USA like something like cheddar style cheese but sadly gorgonzola, which is a favorite of mine is beyond most people's tastes. Thanks for wishing my mother happy birthday also! She knows I use youtube find new things to cook often and is mystified that I refer to it as a community! I may have to show her your reply to convince her!

"Carnaroli", "Vialone nano", "Roma" e "Baldo". These are the main ones types risotto rice for risotto. P.s. remember not to rinse the rice ;) Ciao

For the sake of truth there is an ancestral dispute between the west and the east side of Sicily, from which arancine come from. West, including Palermo, the capital, calls them arancinE, which is feminine, not arancinI, which instead is masculine. This is due to the fact that arancine take their name from oranges, the fruit, which is feminine.
