Vindaloo is a slightly tangy, savory curry made with pepper, cloves, and other aromatic spices. While my version is made with beef, you can use any meat for this dish including pork, chicken, or duck. Perfect for serving at Christmas dinner!
Ingredients:
1kg beef, cleaned and cut into chunks
1 teaspoon salt
¼ teaspoon turmeric powder
For marinade:
1 teaspoon coconut oil
6 large garlic cloves, sliced
1 ½-inch piece ginger, minced
1 tablespoon coriander seeds
1 tablespoon fennel seeds
½ teaspoon cumin seeds
1 ½ teaspoons black peppercorns
½ teaspoon mustard seeds
5 cardamom pods
6 cloves
2 medium cinnamon sticks (1 teaspoon)
3 tablespoons crushed Kashmiri chilis or 10-12 whole dry chilis
¼ cup vinegar
Enough water for grinding
For sauteing:
2 tablespoons coconut oil
2 medium-sized onions, thinly sliced
½ teaspoon salt, more to taste
¼ teaspoon turmeric powder
1 sprig of curry leaves, more for garnish
1 medium-sized tomato, sliced
1 cup of water
