What makes Belgian fries, Belgian is that they are cooked in beef tallow just like McDonald's did many years ago, not in oils. Does it make a difference? You bet. Try it for yourself and taste the difference. Also, Belgian fries are cooked at a much lower temperature for a longer period. The first time at 250 degrees F and the 2nd 350 degrees (and never more than 350). And as you pointed out they need to cool for at least 45/60 minutes before the 2nd cooking. Try the beef tallow and the lower temperatures and you'll swear you're still in Belgium. Good luck with you KZitem venture.

125°C for 10 minutes, then 175°C for 4-5 minutes. Never use oil (oil oxidates), beef tallow and a bit of porc dripping or horse fat

Correction : After rincing in water, thoroughly dry off with a towel then continue like this lady but : 1 minute longer on 325 and 2 minutes less on 375. Crucial is "Bintje" potato and grease from 'Ossewit (flemish) in french Blanc de Boeuf (walloon)" This is a brand of beef fat.

Theory I learned at school as a Belgian: The area where the american soldiers stationated in Belgium during WWI was a Flemish part. But until the 1960 the Flemish language was considered a language for farmers and poor people. So the Belgian generals and staff only spoke French. That's why the language they communicated was French. So the Americans thought they where in France 😊 That's why --> French fries

The Foreign Fork I heard the crunch!! Was a proper crunch... But surely you need the starch to help crisp up the potato. Aren’t potatoes high in starch recommended for fries?!? Ps... which potato did you use? Be great if you could clear this up! Thanks!

I love Andalouse sauce! I think it is inspired by Salsa Brava (at least the industrial version of the salsa brava) that comes with "Patatas Bravas", a fries like dish from Spain.

As a Belgian, living in the US, this was the first I heard, and I was like, what did she just say... As far as frying goes, I do my first fry at 275, much lower and cook them a bit longer at lower temp. Then finish at 350 to 375 for the final fry. And mayo is the national treasure more so compared to andalouse, so home-made mayo would have been a fun add-on just as much!

The story goes as follows… We all know that Americans in general aren’t that strong in geography, and certainly not around the 1940’s . On top, the GI’s in WW2 mostly were coming from rural areas of the US. And there’s also a lot of confusion around Belgium’s official language(s). Now, the southern part of Belgium, is the French speaking part of the country and was liberated by the US Army. There, Americans were for the first time introduced to the delicious Belgian fries, the best in the world. But since people were speaking French over there, the GI’s thought they were still liberating France. So once back at home, they talked about French Fries and how good they were, while actually they were talking about … Belgian Fries.

Hi Alexandria I'm Samy from Algeria I love fries , les frittes in French , your recipe is totally correct but it lacks a crucial information, it is better to use "Bintje" potatoes. If you ever make a special recipe for Algeria, I recommend you the Kabyle Couscous from Bejaia for example, many people believe that the couscous is a Moroccan recipe but it is wrong, it is Algerian while Morocco is known for its famous "Tajin". Mc Donalds uses some beef fat to season/cook their fries. That's why a whole bunch of Mc Donalds got burned down in India. Serving the Hindus Beef Product.

The species of potato is very important. The most tasty result you get from 'bintje', developed by a Dutch, or better Frysian schoolmaster. And there something wrong with the colour of your fries. They are usually yellow, not orange, so the fat was to hot or you left them in to long.

I was always led to believe that fries were invented in Belgium but the name was originally “Frenched fries” because they were cut into thin strips.. this eventually became French fries.. which kinda makes more sense to me.

As for the origin of the name "french fries," I had heard that Belgians called it that name because they would french cut the potatoes. A french cut is when you slice something lengthwise into strips.

I can guarantee you Bruce, no Belgian ever would call fries "French fries"...We just call them fries, like we would call a waffle just waffle, not Belgian waffle. The name was given to it by Americans. Your french cut theory could be correct though 😄

You can use sunflower oil or vegetable oil. if you really want to be authentic, you can use beef fat.

@@pnoipr8 try to find beef fat for the best taste. Don´t use peanut oil (arachide oil) because it gives almost no taste to the fries. In Belgium they´re selling oil especially for frying, that oil is a mixture of different vegetable oils (Sunflower, colza and palm oil). But the best fries you can only get with beef fat.

Nobody knows who created them first but as a French, I won't dispute Belgium elevating them to an Art. You can put some animal grease in that oil to cook them, I know they use beef fat instead of oil in Belgium, I use duck fat if I have some.

Don't wash the fries, you take away the starch and that is what makes them crispy. Just lay them on a clean towel and dip them a little with it

the french fries story of your girlfriend is not completely true. they did originate in Paris but we made it into a cultural thing and sell them everywhere and anytime! that's what makes them Belgian, the culture... same as beer, originated in Czechia but we cultured it! with we, I mean the Belgians :-)
