Courtesy Yzanne Williams-Chance from Tobago
¾ cup brown sugar
1½ cups sesame sesame seeds
½ teaspoon grated nutmeg
Place the sesame seeds in a large frying pan or pot and cook until golden brown and crunchy (parched). Remove from heat.
Place sugar in a pot and melt completely on low heat, stirring constantly: do not burn.
Add sesame seeds and nutmeg combine together. Using a teaspoon, place mixture on hand greased with oil and roll to desired sizes and shapes. Please note that mixture is very hot and must be rolled hot.
Place on a plate or sheet to cool. Serve.
