With the windy and overcast conditions i thought it would be a good chance to do some shore fishing mainly chasing Walleye with a chance of a Northern Pike. These fish tend to be more aggressive in these conditions and it turned out to be a good decision. The Texas Eye Jig matched with the Z-man goldrush Jerkshad was the lure of choice.
I managed to land a nice walleye and pike and there was only one place they were going and that was my pitboss smoker for some Candied Smoked Fish.
The smoking process is quiet simple with a brine consisting of
1 cup dark brown sugar
1 cup light brown sugar
1 cup kosher salt
Brine for 2 hours, wash and pat dry and leaving in fridge on racks for 12-24 hours to make that pellicle.
smoke for 2 hours on 140 then baste every 30 mins and finish at 200 for 15-30 mins then your done.
