Happy birthday dad! Here's mama Wong's take on an Asian classic - Candied Sweet Potatoes.
INGREDIENTS:
3-4 Japanese Sweet Potatoes
1/2 cup of sugar
1/2 cup corn syrup
Sesame seeds
Vegetable or Canola Oil
Prepare your sweet potatoes by washing then peeling them. Use the roll-cut technique to slice each into equal sized pieces. Soak these in water while you prepare your oil for frying.
Fill up a pot with your vegetable or canola oil and heat it up to 300 degrees F. Make sure to not let your oil heat up too much as it will cook the sweet potatoes too quickly.
Dry off your sweet potatoes and microwave them for 4-5 minutes to begin cooking them. Once they are done and drained of liquid, drop them in one by one into the oil. You will want to cook these until they reach a nice golden brown and are cooked all the way through. You can use a toothpick to check the inside of the sweet potato if you're not sure if they're done yet.
Once finished, let these cool off while you prepare the sugary sweet topping. In a pan combine your sugar and corn syrup on medium low heat. Stir until it becomes a liquid and combined. It will eventually turn into a liquid and turn brown.
Now it's time to coat your sweet potatoes! Be quick and dip them or pour them all into the sugar mixture and coat them all around. You can sprinkle sesame seeds over these when they're done for an extra splash of flavor. We dipped each piece quickly into a little bowl of water before we ate them. It helps cool off the sugar and make it a little easier to eat immediately!
