Today I have brought you this super recipe that I know you will love, it is this easy and delicious chicken lasagna with very few ingredients and very easy, you will be like the chefs of the house, so enjoy it a lot, even the next ....
INGREDIENTS
FOR THE BROTH
- 600 g chicken breast
- 70 g fresh cilantro (1 handful)
- 2 stalks of celery
- 1/2 red onion
- 2 cloves of garlic
- 2 branches of chives
- 1 tablespoon of salt
- 1 tablespoon freshly ground black pepper
- 2 tsp dried oregano
FOR THE FILLING
- 12 sheets of pasta for Lasagna
- 1 large white onion
- olive oil or your preference
- 1 large carrot
- 3 garlic cloves
- 400 gr (1 can) of chopped tomatoes
- 1 and a half tsp dried oregano
- 1 tbsp butter with or without salt
- 2 tsp freshly ground black pepper
-1/2 tsp salt
- 500 g of cheese to gratin (in this case I used cheddar cheese)
PREPARATION
We are going to start by cooking the breast, which we will do in a large pot with 1 liter of water over high heat, to this we will add the celery, cilantro, garlic, bay leaves and onion, all previously washed and cut ( the size does not matter), then we will add the salt, dry oregano and pepper. We cover and let it cook for 40 minutes, when it is done we take it out and place it in a clean bowl and then shred it either with our hands or with the help of 2 forks, we are going to reserve this.
On the other hand, in a large frying pan or cauldron we will begin by making the lasagna filling, over low to medium heat we add the butter to the pan along with a splash of oil to prevent it from burning, then we add the crushed garlic and let it cook. Brown them just a little (approximately 2 minutes), then add the carrot cut into small squares and let them cook for about 5 minutes. When you notice that the carrot is softer, add the onion cut into small squares and let them cook for 7 minutes. More, after the time has passed, add the salt, pepper and dry oregano, let it cook for 2 more minutes.
When everything is well cooked and integrated, add the cut tomatoes to the sauce and stir well to integrate everything. To this you are going to add 1 teaspoon of sugar to balance the acidity of the tomato. Once everything is mixed, add the chicken breast that you had previously shredded to the stew, stir to integrate everything very well and set aside.
Now on the other hand we are going to cook the pasta sheets, in a pot over medium high heat you are going to place enough water but not to the top with a little salt, when the water is boiling add the pasta sheets and let them cook for 3 minutes, after the time has passed, carefully remove the pasta sheets and place them in a bowl with cold water to stop cooking for just 1 minute.
Now comes the fun part of assembling our lasagna: in an ovenproof dish we are going to place a little bechamel sauce as a base, then a layer of pasta, on top of it a layer of the filling, a little more bechamel sauce on top of the filling and finally a layer of cheese, we are going to do this operation until we reach the top, ending with a layer of cheese.
We put this in the oven at 180 degrees x 25 minutes (the oven must be preheated)
After the time, we take it out and let it rest for 10 minutes to prevent the liquids from dripping when cutting the lasagna when serving it.
