Chicken Soup Recipe
Makes 8 Cups
Ingredients
1 Tablespoon oil, I prefer olive or avocado oil
1 1/2 Cups onions, diced
3/4 Cup celery, diced
3/4 Cup carrots, diced
4 Cups chicken stock
1 Teaspoon black pepper
2 Cups chicken, diced or shredded
1/2 Cup, of ditalini pasta, cooked and cooled
1/4 Cup parmesan, grated
A Few Dashes of hot sauce, such as Tobasco
Method
In a medium sauce, pot heat the oil and saute the onion, carrots, and celery until soft.
Add the chicken stock, chicken, and black pepper. Bring to a simmer.
Simmer for 30 minutes. Add the remaining ingredients. Simmer for 5 minutes.
Serve and enjoy.
Can be stored for 7 days in the refrigerator. You can also freeze it for later use.
