In this video, I show you how to make chicken. Homemade chicken stock is the easiest way to add flavor to your soups, sauces, gravies, and even rice. Here's the recipe:
Makes about 1&1/2 quarts
Ingredients
1 chicken carcass
1 and 1/2 onions
1 stalk celery
1 carrot
3 peppercorns
1 bay leaf
a couple of parsley stems
8 cups of water
Method
Put all the ingredients in a pot, and add enough water to cover.
Simmer for 2-3 hours, skimming the fat and scum every 30 minutes.
Strain, use within the week, or freeze for future use.
