CHILI WITH SHRIMP PASTE SAUCE ( SAMBAL BALACAN), or ( SAMBEL TERASI)
Sambal balacan or sambal terasi, shrimp paste chili sauce (alternate spelling: trassi or trassie), a common Indonesian style of sambal except that sambal terasi is stronger in flavor (more tangy and with more fermented belacan). Sambal is native to the cuisines of Indonesia, and popular in Malaysia, Sri Lanka, Brunei and Singapore.
Traditionally, sambal is grounded in a mortar and pestle so they usually have a coarse texture and consistency. Therefore, if you're using the help of modern technology such as the Magimix Food Processor, we recommend that you do not over-blend the sambal. You can prepare sambal belacan in bulk by storing it in a jar for up to a week.
INGREDIENTS:
10 pieces of Red onion
6 pieces of garlic
1 1/2 of tomatoes (slices)
30 small chili( chili padi)
5 pieces of big red chili
37 g of brown sugar
14 gr of shrimp paste
1/2 tsp of Chicken stock
1/2 tsp of salt
lime juice ( up of choices) set a side
cooking oil.
METHOD

1. Prepare all the ingredients and wash clean and cut them if necessary.
2. in medium heat of work pour cooking oil, add garlic and onion fry until half cook and then following a big chili and small chili in,, fry again until all is cooked. pick them off and place into hand blander or pounding bowl, blend them until rough texture
3. in same work add tomatoes fry until cooked, after that add the Shrimp paste stir it together, pressing them with spatula. when everyone is getting fine texture add in the blended chili in, add salt, chicken stock(optional) and brown sugar...bring to boiled an other 2 minutes.
4. ready to serve...enjoy!!
This sauce is can condiment to other meals like Curry laksa or eat self with white rice as a sauce, or as dip of fried chicken. typically eat with Nasi lemak(rice in coconut milk). You also can searching at google what is Nasi Lemak is so popular in Singapore and Malaysia or even Indonesia.
