This combination of three milk and coffee is delicious! No cap! And the coffee sponge cake is just as fluffy and soft as a traditional genoise. In short, a madness on the palate that you have to prepare and try!

Ingredients:
Coffee sponge cake:
- 6 egg whites.
- 6 egg yolks.
- 160 grams of flour
- 150 grams of sugar
- 12 -15 grams of instant coffee
- 90 grams or ml of milk.
- 75 grams ml of oil.
Coffee Milk syroup:
- 400 ml of evaporated milk.
- 250 ml of condensed milk.
- 350 ml of Heavy cream.
- 2 tablespoons full of coffee or 12 grams.
Coffee Custard:
- 250 milliliters of whole milk.
- 40 grams of sugar.
- 15 grams of cornstarch.
- 1 egg or 2 yolks.
- 12 grams of coffee beans to infuse with milk or 6 grams or 1 heaping tablespoon of instant coffee powder.
Coffee Chantilly cream:
- 425 ml. of Whipping cream or cold heavy cream (2 - 4 °c).
- 12 grams of soluble coffee. (or 2 tablespoons approx.)
- 1 1/2 tablespoons of hot water to dissolve the coffee.
If you use heavy cream, sweeten it with between 3 and 4 tablespoons of powdered sugar.

*IMPORTANT:
- Bake between 150 and 160 degrees celcius (Oven heated for 15 min) for at least 30 minutes.
- If it is a kitchen gas oven or a conventional kitchen oven, bake at a high temperature. If it is a small electric oven, bake at 180 °C.
- Always, grease the mold or use baking paper on the base (and if desired on the contour as well).
- Always keep the cake refrigerated. Consume cool.
