I'm a 56-year-old female bodybuilder. I have spent THOUSANDS of dollars on cottage cheese over my lifetime. With the inflationary prices of 2021, I will be trying this soon! I pay almost $4 for a gallon of milk and almost $4 for a 24 oz container of cottage cheese. When cottage cheese goes on sale, it's like a gift from the angels. LOL Thanks You So So Much Mary!

In my 7th grade foods class, (60's) I was taught to make Pie Crust using 1/3 c milk plus 1 tsp vinegar. I love my pie crust & have never seen a recipe like it. Doesn't use ice water but its very flakey. That tang is the best part of my pie crust.

I live in France where it's always been nearly impossible to find commercial cottage cheese. Danone took a crack at it for a year, promoting it the same time as a variety of Skr products. It looks like cottage cheese has lost the popularity contest, as it's now off the market. This prompted me to hunt for a recipe, and yours was both easy and satisfying to make. The finished cheese is delicious. Who needs Danone anyway?!

I just made my first batch. I scored a gallon of Organic whole milk for $2.50! It is absolutely delicious! I like cottage cheese but I never eat it plain because it’s too salty for me. NOT SO with this homemade. I ended up with 3 cups of deliciousness that I can eat plain (no salt). Thanks Mary.

We make a similar version of this, we drain and squeeze the whey out, but no rinsing under water. And then add a little salt and any herb seasonings (such as basil, oregano, etc.) to the dry cheese and it makes a wonderful herb cheese. I had not thought to leave it as is once it was drained, so we are definitely going to give this a try! We LOVE LOVE LOVE cottage cheese! Thanks for sharing!

My new favorite home cooking channel :) I was at the store earlier and thought that cottage cheese would be a nice snack on a hot day. However, I've made paneer a handful of times and it always reminded my of cottage cheese. So, when I got home I searched for a recipe and your channel popped up. I checked out a few of your other videos, and I have to say I LOVE your delivery of info, makes it so much more approachable than other content creators. No need for specialty ingredients, expensive tools, or super exact measurements. I mean our ancestors did this before sur le table came into existence! Time make me some cheese! Thanks Mary :)

Thanks so much Mary! We made some and it was a really nice dry cottage cheese. My husband loved it without any cream. It was a lot like eating crumbled mozzarella. I liked it with a little cream and salt, I really enjoy your channel. In such an isolated world, coming to your channel is like visiting with a friend. Omgoodness! I finally made this and this is the only way I'm going to have it... no more buying it from the store. I've made this and have eaten with canned peaches, was delicious... but my favorite so far is that I used it to make lasagna... and with my homemade sauce... between both, it was the best lasagna I ever made. I love it...

Thank you for yet another fantastic recipe. LOVE your instructions and detailed "lessons". I grew up in Switzerland and we always drank raw milk right from the farmer next door. The cows grazed in lush pastures filled with alpine herbs and flowers. I wish you knew how delicious that resulting milk was... American milk is sadly very bland. However, I have become accustomed to it. I will be making this recipe tomorrow. Thank you again!!!

Thanks for mentioning ... makes me realize the sky is perhaps the limit for infusing chosen herbs or citrus peels into the milk while warming (citrus peel may likely require adding to the vinegar, as commented above, to avoid curdling the milk early)

I think that different distilled vinegar have more or less flavour. Usually I’ve been using Heinz. But I’ve been using Allen’s recently. There is a distinctive fruity flavour to it! It’s really lovely and also it seems sweeter tasting!

I am so happy to find this recipe. I once read that making cottage cheese was very complicated in a factory so I never even thought about making it! I have some store-bought in the fridge that is 400 mg sodium in 1/2 cup which is ridiculous. Can’t wait to try this! Thank you for the video.

This sweet lady keeps showing me how I have been basically bamboozled buying these easy to make things at home mass produced and highly priced in the stores. I will be rethinking how I spend my money and take a little time to do these things at home. I have a parent that has specialized diet needs such as no or low sodium and low carbs. These makes all these things so much more nutritious and they don't seem to take any time at all and nor are they labor intensive requiring all kinds of "strange" ingredients. I am convinced. Love this! Watched this morning and just made a batch. Even got some organic milk at the store dated 2/11/2020 for half price. Just put it in the fridge for chill mode. But, I tasted it and even warm it’s amazing. Already made ricotta last weekend, also amazing. I am adding more things to my “ never buy again” list. Oh yeah, also picked up some tomato paste. Gotta make fermented ketchup.

I used a thermometer and let it get to 120 but it turned out more like ricotta cheese. I think I like more of a vinegary taste to mine but it is good but I think it can be better. Thank you for teaching me something new to work on. :)

You are a good domestic teacher. You teach or instruct with great clarity. You are gentle and make the environment much comfortable and you are also a clean cook. In some other demonstrators way of making cottage cheese, I wondered why it is ever necessary to rinse away every whey indirectly introducing some harmful bacteria in the cottage cheese that could be trapped in the process of that extra rincing.. thank you so much for teaching me better. I LOVE cottage cheese. I will often have it for my lunch with some tomato and cucumber slices! I salt and pepper the combo to taste (yes cottage cheese can be salt and peppered) and enjoy a VERY tasty lunch. Thanks Mary. I'm doing this. Now I need to find some whey recipes.

Chuck you may even add chives and radishes to the cottage cheese and spread it on a buttered fresh baked bread, it is soo delicious. You may also add chives, radishes and a chopped up hard boiled egg. Try it :) I grew up on stuff like this and have lots of recipes.

Cottage cheese is a staple in my house! Grandparents raised me - grampa taught me to put some cottage cheese in half of a cantalope fresh from the garden or market in the heat of summer - and then sprinkle pepper over both! YUM YUM. Matter of fact I have a bowl beside me - I just ate some cottage cheese (store bought) and some canned peaches.

I've made paneer the process is basicly the same. Who knew. I'm going to try it as I love cottage cheese.

Yes, you are exactly correct. All the stovetop cheeses are basically the same. I think with paneer you have to press it and then cut it into cubes, yes? Love, Mary

I just love your channel Mary! I've been binge watching since I found it. I adore all of your pretty aprons that you wear while teaching us so many wonderful new recipes and methods for explorations in the kitchen. Do you have a downloadable pattern for them? When we lived in Ukraine, we bought cottage cheese from the farmer next door. It was pressed together so tightly, we could break it off into chunks and eat it. It was heavenly. I will try yours this week.

Made it in Korea with 10.5 % vinegar. Used 1/2 the amount called. Separated nicely. Cottage cheese is expensive here as well as hard cheese. Needed some for eggplant lasagna. Turned out great. Just tested my milk with my finger. Thanks for sharing this information. 🤗🤗

Hi Jean, I love cottage cheese with grape or cherry tomatoes cut in 1/2 and so does my grandson who won't touch a tomato to save his life unless I "hide" them in his cottage cheese. LOL

@@babygrandma8654 That makes sense. My family prefers it over ricotta cheese in lasagna. My son Daniel and I snack on cherry tomatoes as is. Lee doesn't like tomatoes texture so he'll only eat them when totally liquefied like in tomato sauce.

In India, we usually use either a spoon of yoghurt or some lemon/lime juice to make cottage cheese at home. My favourite is lemon juice since it leaves a lovely lemony scent in the final cheese. I love saving the whey to add to dals or when cooking curries

It is August 2024, and I just made my first cottage cheese, but I made some mistakes. I forgot I had my milk on low heat while I worked on my hydroponic garden in my garage. I then went with my husband to run an errand, when I remembered the milk was on the stove. I was glad my son was home to check on the milk and turn off the stove. When I returned home, I continued with the process and poured in 3/4 cup of vinegar, as you instructed. I waited for approximately 1-2 hours before straining the cheese. I let it strained an addition hour from the milk bag. After bottling all of the whey, I noticed some sediment at the bottom. Should I strain it again to remove the sediment or leave it? After tasting my cheese, I added some salt for taste, put it in a container and stored it in the refrigerator. Mary, you were absolutely correct, when you said the recipe is very forgiving of mistakes. The cottage cheese was perfect. It was moist with no vinegar taste at all. I loved it and will try more of your recipes. I also have your book in my Amazon cart to purchase. Thanks for all you do to assist those of us who value traditional home cooking.

Thanks again Miss Mary. I just went to HEB to find some unpasteurized milk and the one I went to did not have it. The store also did not have any rennet tablets. Using your recipe, I can make cheese without all the extra stuff. I can hardly wait, but I must because I am making more soap tonight! Thanks a bunch!!

I have just discovered Mary's Nest and I'm so excited to find this recipe for cottage cheese. I have been making yogurt for some time because I hate buying all of the plastic containers. For that reason I have avoided cottage cheese for years. Now I have an option! Thanks, Mary.

Forget about the rinsing, rinsing because as a youngster I used to eat it both parts before turning it into cheese if too much whey I discarded some.

I am from Ukraine , and live in the US for over 30 years, I am used to live on natural, home made cottage cheese, and not like an American version, watery and salty, but cottage cheese that you can cut with a knife and dryer yet not salty and tastier... this is great video and I think it is close to what I am used to have way back when. And just for an off the wall question...I just used up the last of goats milk I've been making keifer with...have about a pint left...dong want to buy store bought milk...can I put the keifer grains in the last bit of goats milk and put them in the fridge? Will they go dormant till the goats kid in March?
