great crab cakes don't have all those additives in them like mayo, breadcrumbs and is served with a roasted red pepper sauce. I know and I judge good restaurants by their crab cakes

Maryland resident here, our crab cakes are extremely simple, you have to let the crab meat shine. 1 pound jumbo backfin lump..pay the price and get the best...1/2 cup HELLMAN'S mayo..do not substitute, you will regret...old Bay seasoning pack. Do not add crackers, panko or fillets. GENTLY fluff meat, mayo and seasoning. Take 1/3 measuring cup to measure out each crab cake, place on cookie sheet. Bake @350 for 22 minutes. Do not put and sauce or anything..just enjoy. This is the BEST Maryland crab cake.

I learned so much from Anne Burrell over the years. To this day I still use her focaccia recipe and her meatball recipe although I've tweaked it a little bit but just in general the method of planning a meal and cooking multiple things at the same time. She is an excellent chef.

So, use large chunks of crab meat (lump), don't compress the cakes then watch them fall apart in the pan so you have to fish out the little oily pieces. Got it but no thanks. I'll stick to smaller but more crab, an extra egg and tightly packed caked cooked a little longer with a wedge of lemon and my tartar sauce in a little cup on the side.

I hate "grilled" on a pan. Lost me enough. Off the vid. Give me coals, fire, wood or nothing. Grilled is reserved for the Grill
