I put the melted butter in a small metal jug one that I use for heating milk for latte’s, this is a really great tutorial, I’m unable to post a picture of my eggs Benedict? But I’ve been trying to perfect the nightmare of getting everything just right for at least 20 years! This method allows me to make the sauce before poaching the eggs, its 1 less nightmare in the process of not having enough hands 🤪

perfect the only thing I saw that could be changed is that to separate yolks from whites the best way is to crack the egg on a flat surface no prevent bits of the outside touching the interior and you should use your hand instead of the shell because it has got a lot of bacteria and washing the egg's exterior doesnt help at all due to its porous structure (bacteria would reach the inside) let the egg whites run through your fingers or place it on a bowl and grab the yolk save the whites to clarify a brown stock or to make pastry if you heat them without making them coagulate (65°C) and then drop their temperature really fast, they will last longer on the fridge

Thank you, always wanted to make,but heard it was really difficult. Couldn't get any pre made in the supermarket and really fancied it this morning , so did a little google search and picked yours. Loved it and so easy! I did cheat and use am electric mixer (I'm not a morning person) and I put in a bit too much lemon (my fault I didn't measure and just chucked it in) but still very tasty and creamy and everyone loved it.Thank you :)

This seems very similar to a mayonnaise recipe that I tried. The big difference is that you use 1 egg and 1 cup of avocado oil, and no heat applied during the whisking. I’ll give this recipe a try next.

The brand is “giada”. I’ve actually never looked before. I’ve had it for so many years I don’t remember where I bought it and I can’t find it on Amazon but when you Amazon search “butter melting pot” there are a lot. The important thing is to melt it over super low heat and remove from the heat just before the last bit is melted and just keep stirring until it finishes melting. You should be able to stick your pinky in it and it shouldn’t be hot but rather baby bath temperature warm.

I tried this but maybe I needed to whisk even more. When I served it the butter seemed to have seperated from the sauce. It still tasted nice over my salmon and vegetables. I’m going to try again.

oh noooo. Yes, when it separates that means it curdled. This happens when it's heated too much or when you stop whisking. Make sure the water below the bowl is just hot, not bubbling. If the hollandaise gets too hot it immediately curdles. And cooooonstantly whisk. Never stop even once you removed the bowl from the heat because you reached your desired consistency keep whisking because it's still too hot to not curdle. Once it reached a low enough temp to be just warm, you can stop whisking and it'll hold its shape.

it is but it's risky to reheat. It curdles so easily, you risk it curdling every time you reheat. You basically have to reheat in a water bath and on veeeery low and constantly stir, so it takes about the same amount of time as making a new sauce from scratch.

Up to 4 days. I don't recommend refrigerating though. It becomes hard like butter and you can't really reheat it the butter separates when you reheat it. It's better to make half the quantity if you don't think you'll finish it.

You get the best results by mixing my hand. It's the only way you can "feel" and "see" what the consistency is like at all times. It's such a delicate sauce. You risk overmixing with an electric mixer. Once you have a lot of experience I guess you can use an electric mixer but not when making the first time.

I don't recommend storing it. Once you put it in the fridge it becomes hard like refrigerated butter. To get back to a creamy consistency you would need to constantly whisk and reheat in a water bath which makes the process just as long as making a new batch from scratch. I recommend making only half by halving the recipe if you don't think you'll be able to finish a full batch in one sitting.

Hii I have a question but are the egg yolks fully cooked for the hollaindaise sauce or no? Like is it safe to eat without getting salmonella? Because I wanted to get a thick creamy consistency but I also want the hollaindaise sauce to be safe enough to consume without getting food borne illness.

I would not serve this to an old sick person or a 6-months old baby but other than that have never felt unsafe eating raw eggs in Europe or North America. That being said, I got Salmonella twice so far. Twice from super fancy restaurants in developing countries and it was never egg. Both times chicken. Never gotten sick from anything I cooked at home because I follow all commonly known hygiene protocols. I don’t work at the FDA of course so anything I say is just my own personal experience. I feed my healthy 8 and 10 year olds this hollandaise and my over 70-year old parents eat it, too all the time since forever.

@@Greenhealthycooking ohhh okay I see, but my question is that if I overcook well not really overcook but if I double boil the hollaindaise sauce on high heat like really high heat does it kill the bacteria or how will I be able to kill the bacteria? I dont have a thermometer to do check if it is 160 C either.

It’s not as easy as it looks. While adding butter you have to be very careful doing so. The butter needs to blend in with the egg mixture. So add the butter slowly and constantly will help achieve and the results will be amazing.
