I used a cheesecloth and there were a lot of strands throughout the finished butter product. Is there a way around this? Thank you, great video!!

Hi there! You could try two rounds of cheesecloth and hopefully everything will be filtered through better!

Great question!! You’ll want to use milk kefir or yogurt.

You can use 2-3 tablespoons of cultered buttermilk or sour cream if you don't have kefir. Save back some of the buttermilk to start your next batch. Also, adding a little salt extends the life of the butter. Just add it after all the ice bath washing is done.

You can find Kefir in the dairy section of a lot of supermarkets (it's popular in smoothies) but if you can't find it you can sub in plain whole-milk yogurt with live cultures.

Experiments have been done on traditional 'kefir grains' kefir, and it has kept completely safe to drink over a year old. Make sure it doesn't smell bad, but kefir's special symbiotic bacteria/yeast construct completely blocks out dangerous species! Over time, they eat away more and more of the lactose sugars, making it more and more sour, over time. For Keto, this is great, as the carb count can approach zero! While straight, unfermented milk is quite high.

How long does it keep in the fridge? Can you freeze the buttermilk? I won't use all of it before it goes bad. Thank you!

For cultured butter, you can refrigerate an airtight container for up to 1 month, or frozen for up to 4 months. For buttermilk, give the buttermilk a good shake and pour it into ice cube tray. Once they are frozen, pop the cubes into a ziplock freezer bag. Buttermilk will keep frozen and we recommend using within three months!

Do you let it ferment outside or in the fridge? Is it true it would taste better if you ferment the mixture in a metal pan?

For this recipe we ferment at room temp for 12-36 hours. We've always used a half gallon jar while fermenting and it turns out delish!

What is the yield of butter from the quart of cream?

They would work, but getting them back out of the butter would not be easy! Chunky butter does not sound appetizing to me, but it would be perfectly safe to eat.

For this recipe, we recommend using liquid kefir and not kefir grains!

If you don’t have real milk kefir use yoghurt. DO NOT USE STORE BOUGHT KEFIR. Store bought kefir is made with kefir starter which has only a tiny amount of the probiotics in real kefir.

Work smarter not harder. Use a glass bowl instead of a jar with a neck. It's so much easier to scoop out the cultured cream. Also it would be prudent to wear latex gloves while doing all that washing.

I went to my local store and ALL the Cream, even the organic brand was ultra pasteurized,very disappointed

Oh no. Organic brands unfortunately are often ultra-pasteurized because of regulations but usually someone is making regular old pasteurized cream.
