I love the way how you give nice instructions. The reason why I searched on this recipe is to understand well the procedure in making this recipe. I show how to make authentic Dashi made with dried kelp and dried bonito flakes in my miso soup video. Those two ingredients are usually available in Asian grocery stores. But, if they are not available, you can use instant Dashi powder. 😊 Thank you for watching.

There are no specific rules about what to put inside of chawanmushi. So if you can't eat those ingredients, I recommend spinach, carrot, and white fish. I sometimes make plain chawanmushi without any filling. That's good too.😋

I've just found your channel, and really like it! I especially like how you explain WHY you do things. I did have a question of the dashi you make yourself: if I'm planning to make several things that need dashi over, say, a week of cooking, can I make a large batch of dashi and store it in the refrigerator?

Thank you very much for the comment. Yes, you can make a large batch of dashi and store it in the fridge. It's good for 3 or 4 days. After a few days, the dashi will start to lose its fragrance. Some people say that you can freeze it and store it in the freezer for a week or two. But I never tried.

My chawanmushi did not set even though the chicken and prawn were already cooked inside the egg mixture. 😢 I ended up pouring the egg mixture into a pan to make a giant watery omelet. 🥲 The flavors are good. Tastes just like chawanmushi. 😄 I think perhaps it is best to also specify the measurements of the tea cups and also the water temperature in the big pot. 🙏

Yes, the width of the mug will affect how quickly it cooks. I used the narrowest mugs I have which are about 3 inches (7cm) wide and it turned out quite well. I think it was very slightly under-set, since the custard broke into small bits suspended in the dashi broth. The taste was good and the meat was fully cooked.

I sometimes use imitation crab( Kanikama stick) instead of kamaboko. I assume imitation crab is called Surimi in your country. If so, Surimi is totally fine too. They do the same excellent job in chawanmushi.🤤

Kunihiro san, I love this dish but I have a question.. When I pour the beaten eggs into the sieve, there will be some bits of egg white left in the sieve.. So it's not 120ml but maybe 117gm..do I add more egg to add up to 120ml. My eggs can't set..

Tiny bit of egg white left on in the sieve is fine. Don't add anymore eggs. There could be a few reasons why your Chawanmushi didn't set. One, maybe the heat was too low. Next time, please turn up the heat just a little more, but not too much. Second, you put more watery ingredients than I suggested in the video. Ingredients like shrimp and chicken will release water during steaming. So if you put too much of them, the egg mixture becomes too watery during steaming, and it doesn't set properly. But, I think it's mainly the heat.. I also had hard time adjusting the heat when I tried making Chawanmushi for the first time. I hope it'll help. Please keep trying. You'll get a better result every time.😋

my thai friend did serve this appetizer but she used only water instead of hondashi, it taste good also😂
