Just made this and hot DAMN it is delicious! I made 1.5x the custard in order to fill my 9"x13" casserole dish and cover more of the bread. I used only brioche. I also didnt heat up the milk and sugar mixture first--I just mixed everything and poured it on top. Seemed to set up well, and the top layer got nice and crispy. Lovely textures, excellent flavors. Pretty sweet, especially with the caramel, so I may decrease the sugar in the custard next time so I can eat this for breakfast vs dessert. Thanks for a great recipe!

From my experience working in a bakery as a clerk, I noticed that the bakers would take the bread out of the oven half way through the baking process and score the dough then. catfish is a bottom feeder, if it is cheap to buy it most likely is imported from big fish farms and fed with antibiotics..be careful that would not be the best thing to eat. but if you do use it then you can use it pretty versatile: steam it and eat with thai curry, or deep fry it...it is a pretty forgiving type of fish, stays mostly firm.
