Moroccan cuisine is the core of my grass roots. I enjoy sharing my heritage with you through our love of food. I recently visited my cousin Audrey, a photographer living on the edge of Paris. No trip would be complete without a session in the kitchen. I was spoiled with the views from her apartment. The Eiffel tower on one side, the former Royal residence, Chateau of Vincennes on the other, which I was able to visit during my stay. Definitely one of the best views from any kitchen I have had the pleasure to cook in. Join me as we prepare a traditional dish, the delicious Moroccan Pastels(pastela) , so easy to make with so little ingredients.

Ingredients :
5 lb bag of Idaho potatoes
1 Can of tuna fish
Flour or potato starch (gluten free) to coat pastels
3 eggs
(2 tbsp finely chopped parsley or 1tbsp dry parsley)
Vegetable oil for frying
Salt & pepper
Instructions:
Put the potatoes with the skin into boiling salted water
and cook until fork tender.
Drain potatoes and put in colander let cool down
Peel the potatoes
In the meantime open theTuna add salt & pepper
Put potatoes back in pot mash until
soft add 1 egg salt & pepper
Make balls like size of golf balls and form into a bird nest,
fill with 1tbsp of minced tuna and cover with another bird-nest.
Pinch all around to close.
Pass them in flour or potato starch and in beaten eggs
(add a sprinkle of salt to eggs) and fry until golden.
Flip over and fry until golden on other side.
Drain on a paper towel.
Repeat the same procedure for the veggie pastels
