Rice pudding has been around for hundreds of years and was especially popular with cowboys and the army. In the army it was known as officers pudding because before about WW-I only the officers got it, the enlisted soldiers didn't get any dessert. My dad was in WW-I and said they looked forward to an artillery barrage because it would kill some of the mules used to pull supply wagons and they would get fresh meat for a few days.
