RECOMMENDATION: Probably use a Hand Mixer on low setting next time and regular Mixing Bowl! The Blender forces the reaction to happen too quickly, causing the explosion.

@@janalu4067 the issue isn't the heat but the citric acid in the lemon neutralising with the baking soda (a strong base), producing some carbon dioxide that got trapped in the blender bullet. then the shaking increased the pressure further. exactly like a shaken carbonated drink, if carbonated drinks were goopy and could get stuck to your ceiling 😬

I am curious how come you used a blender??? I would have used a blender to blend the lemons yes but then would've poured said blended lemons into a mixing bowl with rest of the ingredients just to avoid this incident because to have baking soda in a enclosed space is a bad idea. Now judging you at all because as someone who frequently bakes I too have had my unfortunate hiccups so thought I share a possible alternative idea so possibly redo this recipe in the future like the way I mentioned how to.. 🍋🍞🤗 @@CafeMaddy

I forgot the final evolution of the appliance and it's name but it's expensive and a multi-use equipment since it's so powerful and makes recipes real smooth. Mainly used for chocolate, pralines, cake, marmalade, madeleine and many more :>

It was probably also because your lemons were super hot when you closed the lid too! Heat will build pressure in the container, had it happen to me with soup once.

i think it might be more blending when it's still warm. always let things cool before blending or they explode. if you're making pasta sauce where you cook the tomatoes or peppers or whatever you MUST let it fully cool before blending PLEASE.

It's also the baking soda and lemons in a small container. As soon as I saw how little room there was left in the blender I was like "oh... Oh no". I would do this in a bigger blender with the removable middle part from the lid so no pressure builds up. Then I think it's fine

When life gives you lemons, make the lemons explosive. In all seriousness, probably exploded due to the gas buildup from the baking soda reacting with the citric acid of the lemons and plus the heat from lemons would make the gas even more explosive. The safer method would be to use a immersion blender instead.

Id also be careful of the boiled lemons! Pressure in a blender can build up with steam (albeit not nearly as much as in the video) so depending on what temperature the lemons are when they're blended, the blender can still "pop" a bit when you open it, ive never had anything explode due to steam buildup, but ive also been really careful to open it often and allow the steam to escape

Little tip to keep things from exploding, open the lid and release the pressure between each blend/shake you do. That way you don’t get everything you love covered in lemon gunk lol

The heated lemons also play a part in that. The heat creates a seal but the backing soda’s reaction is doing the opposite so the two mixed together causes the explosion. Anyways that looks good!

Maybe just mix the baking soda with the almond flour next time. You also will have less time between the reaction and oven, which will make a fluffier cake(and less of a mess).

A regular glass jar blender has a removable cap that will release steam and pressure so that's probably a better option here. Also I'd add the baking soda AFTER blending. Not only is it safer but the cake will be less flat because the gasses released by the reaction are what makes it rise and they escape too much when blended vs just hand mixed.
