🥞 lightest, fluffiest pancakes!
You will need:
140g Self-Rising Pastry Flour
3g Salt
15g Sugar
3g Baking Powder
1 Egg, Separated
250g Buttermilk*
30g Canola Oil
1) Combine flour, salt, sugar, and baking powder in a mixing bowl
2) Whip the egg white to stiff peaks
3) Combine egg yolk, buttermilk, and oil in a bowl and whisk until consistent
4) Combine egg yolk mix with dry mix until just consistent - do not overmix!
5) Fold whipped egg white gently into mix
6) Allow to stand for 10 minutes
7) Heat a non-stick pan to med-high heat
8) Cook on each side for 2-3 minutes
9) Top with butter and maple syrup, and enjoy!
*You can substitute 240g milk with a splash of vinegar added to it if you do not have buttermilk.
