I love how the entire table ends up pure white from the icing sugar/corn flour mixture. That's definitely a liberal application! (And makes complete sense, marshmallows just get so sticky.) Also, yes, we should all take tea breaks while baking!

If you haven't found one yet - one cup of icing sugar to one teaspoon of baking powder and citric acid (can adjust the citric acid depending on how sour you like it). Make sure it's well-mixed and enjoy!

May Lin Agar Agar is the only one I know of but I've not tried to make marshmallows with it. It definitely works for jelly (although it's a bit of a different consistency of course). I may look into doing an alternative recipe but for now I'll bet there are tonnes of recipes on line xx

I've tried agar2 for marshmallow and it didn't work. I think it calls for a different technique because agar2 has different characteristics from gelatine. For example, agar2 won't set when mixed with cold water. You have to boil it then let it cool down. And it's not as flexible as gelatine.

The old Haribo rhubarb and custards everyone gets confused when I say rhubarb and custard and think it's the boiled sweet but it's not it's like pastel and three different colours nowhere really sells them anymore they were definitely penny sweet only although I found a newsagent which still sold them but for 5p! I thought it was ludicrous but still spent about £5 they were a bit stale but so worth it 😂💖
