Yeah, all he had to do was saute a ton of sliced garlic in olive oil, pour it over that pasta with red pepper flakes, parsley and lots of parm reg and make aglio e oilo!

I loved this video. I'm looking for those bare basic technique videos so I can understand the basic concept behind something like pasta before I look at recipes that include flairs on the original basic technique/concept, and this was right on the money.

When I was maybe 10 yrs old, my kid sister and I went over to our Sicilian granny’s house to help her make this insane pasta fatta in casa that was formed by rolling strands of dough around individual broom straws. Took all afternoon. I don’t remember what she called this kind of pasta (we barely understood her strong Sicilian accent, which she managed to maintain her whole life even though she came to the U.S. in 1900 as a baby), but I guess it was basically bucatini. It was an interesting experience, but I wasn’t convinced that the result, tasty as it was, was really worth all that effort.

Another awesome video. So glad I found your channel. My quick tip is the kitchenaid pasta roller attachment. Many of us do not have enough counter space to properly roll it by hand. And it's fun going through the numbers to get perfect pasta sheets!

I do this with 00 flour, sea salt and lukewarm water when on budget, kneading for 10-15min. Covered in a box, 2-3 hrs in the fridge. Then I can roll it paper thin.

Great video, Frank! I use AP flour and a pasta machine, but I'm told that for the rolling pin method, "0000" flour is easier to roll out (Not really in the spirit of your video since most people don't have that in their pantry- Just informational). Looking forward to more!

I wonder why nobody brings up the "Let's make the dough" part. hahaha. anyway as an amateur in the cooking world, I often see chefs and culinary educators tend to be stiff and all-serious (which is not bad, actually), but sometimes I wish they could loosen up a bit, and discuss cooking in a fun way. I really enjoy watching your video, Chef Frank, and still learn something out of it.

For those poor schlubs (like me) who don't live near the sea, and have never tasted ocean water, it's 35 g/l of water (Or, solely for benefit of the Americans, 1 1/8 Oz/quart. Or 2 and third drams per gill. One grain per 30 minims?...) Make it once, taste it, and you've got something to compare to.

One day I tried to make some more or less like you did just here, but I made to much of them so decided to keep the raw pasta in the fridge (in plastic wrap) to cook them at a later date. Almost only 24h after they started to get little black dot on them so I had to throw them away... Do you have any advice about how to store / freeze fresh pasta for a few day after?

I admit, i used a manual pasta-machine since i do not have much space to roll out the dough. What I am curious about: is the flour enough when you cut the pasta so it doesnt get pressed together or do you have to watch out and slide the knife enough? Little feedback to the video: the white balance between the two camera angles is off at times. nothing big to worry, but i think it might elevate the video a bit, if you keep that in mind when editing.

Khairul Kamal the type of board doesn’t matter. You can use a plastic one. Sure you can add garlic to the pasta I would rather add it to the sauce though.

I hand made pasta for the first time a couple months ago. LOTS of work (I kneeded for 10 minutes because that's what I was told to do... 5 minutes sounds MUCH more reasonable!) I've been cooking on and off professionally since 1992, Mostly off. I'm NOT a chef, I'm a COOK. I'm not skilled enough to call myself a chef. but I'm a DAM good cook.

Hey chef frank, what I don't understand with this method is why can't you just do it in a big-ish bowl and make the well in there and add in pre-whisked up eggs so there's a lot less cleanup. I feel like it would be nicer to show because not everyone has the luxury of big counter tops.

Chef we've recently bought a pizza oven (to make up for the cancelled trip to Italy) but we're struggling to find a decent and consistent dough recipe. We love Neapolitan style and have 7g packets of instant yeast, any tips would be appreciated

Never made Neapolitan style pizza, but I can tell you my standard pizza recipe (I'm from Germany): I mostly use 1000g of wheat or spelt flour (405 wheat and sometimes 1050 spelt flour), take 625ml of cold water, half a pack of fresh yeast or one pack dried yeast (7g), and about 20-30g of salt. The easy way is to just mix it all together, knead and roll your dough and put it in the fridge over night. If you want it to be a little better, put 600g of your flour with your water, salt and yeast in a bowl. Mix it for a couple of minutes, let it rest for a bit. Come back and mix it again, slowly adding more of your flour. After having added the rest of your flour, let it sit for a bit again. Come back and start to knead it for atleast 5-10 minutes, roll it and/or cut it into 6 pieces that weigh about the same (250g e.g.) and put it into the fridge over night. Take it out somewhere between half an hour and 2 hours before baking it. Roll it out by hand, put your sauce, cheese and toppings on it and bake it. Enjoy and buon appetito!

Yes, this is the same type of pasta we use to make tortellini. I don't know about chicken, in italy we use raw ham, but for the cheese you definitively should go with parmigiano reggiano. Cheers!
