Pan Haggerty a Traditional Northumbrian Dish
Consisting of Potatoes, Onions and Cheddar Cheese
It also happens to be Vegetarian
Adapted from The Geordie Cook Book by Peggy Howey
Ingredients:
Potatoes (sliced thinly)
Onions (ditto)
Grated Cheddar Cheese
Trex, butter or other spread for greasing the casserole dish
Salt & Pepper
Method:
Grease a casserole dish with plenty of Trex or other fat
Place alternate layers of onions, potatoes and cheese in the dish
Season each layer with Salt & Pepper
Place the lid on the casserole dish and bake in a preheated oven for 50 minutes at
Fan/convection oven - 180° C
Conventional oven - 200° C
400° F
Gas Mark 6
I used an 8"x2" casserole dish because that's the largest flat bottomed casserole dish that I have. You can use any size dish
As the name suggests, this can also be made using a lidded, heavy frying pan/skillet on the hob
