What an interesting idea! I love the honeyed smell of rooibos so probably would enjoy this as well. I have a recipe for earl grey tea icecream. And tea leaves can be used for smoking food. Tea must be more versatile than we usually think.

What did this end up tasting like? I want to make a Gouda but now I’ve watched this I can’t decide to make it with out without the Rooibos. I love different cheeses and the story with this was so cool.

I loved it. The visual appearance is cool, and the taste of the tea was slight but I do think it contributed to the overall flavor profiles of the entire wheel. Christian's addition of lipase to a Gouda created a bold umami flavor- potent and piquant. Fantastic. I finished off a tiny little piece I found hidden in my fridge recently. I had moved a cut part of the wheel from the cave to the fridge at about 1.5 years old, as I was making room for more cheeses, and i forgot about it. The piece I enjoyed was 3 years old, and the most delicious cheese I have ever eaten. The cheese was so creamy, and the flavor were complex and magnificent.

My list of cheeses to make is long but might have to bump this closer to the top. I still have to try the cottage cheese again. Hopefully this week.

I think the whey could’ve have been recycled for something else at least it could go in the garden if there was no salt of course. I noticed in your other video that you saved the whey for recotta cheese. Thank you for sharing I love your videos. 👍

Mhmm. This whey is pretty diluted because it's a washed curd cheese, so it's hard to get ricotta from it (my favorite use for the whey normally😉) Tomato plants love the acidity in the whey. Salt isn't added until later in the process so it's ok to pour on the garden. If you own chickens you could feed the diluted whey to them. Thanks for watching!!
