Heat up egg pan ( it’s square. So omelets come out rectangle shape) with oil Keep low heat Pour egg mixture one ladle ( seems 4 oz or so ) at a time Once egg starts turning solid, fold egg from far from you to near Slide egg near to far, pan oiled again Pour one ladle mixture, make sure from 2nd time you need mixture under omelet in pan as glue Repeat Cold and memorizing shape in a wet bamboo mat for 3mins Dada! You could make it regular round fly pan but omelets shape is not square. I do sub plastic wrap for bamboo mat. It works. Good luck
