There are many different versions of Hawaiian style potato mac salad. All of them are great, but this is our family version. If you are making this for a party, double all the ingredients. I hope you enjoy making it. Let me know if you have any questions.
Ingredients:
1/2 pound (half a box) of elbow macaroni
3 eggs (hard boiled)
1 large russet potato (diced)
5 oz can of white albacore tuna in water (drained)
1 cup of frozen peas
1/2 white onion (finely diced)
15 oz of Hellman's/best foods mayo
salt and pepper to taste
1/3 cup of relish
Note: if you do not like tuna, you could substitute canned chicken
Tips:
If you make the salad and put it in the refrigerator for the next day, you will need to add more mayo. This pasta will soak up the moisture and make the salad dry. Add more mayo and check for taste.
