Ingredients
Dough
1 teaspoon of sugar
1 teaspoon of active dry yeast
1/2 cup of water
½ tsp of salt
4 cups of flour
Fillings
Minced beef
Chopped onions
Salt to taste
Red and green bell pepper
2 eggs
Coriander
Cumin
Garlic
2 Royco cubes
Directions
1. In a large bowl, dissolve yeast in water. Add sugar, salt and 4 cup flour; beat on low for 3 minutes to form a soft dough.
2. Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
3. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink. Add, onion, salt, red and green bell pepper, cumin, garlic, coriander, and pepper. Cover and cook over medium heat for 15 minutes or until tender. Remove from the heat; set aside to cool.
4. Punch dough down and divide into pieces. Gently roll out each piece into a 5-in. circle. Top each circle of dough with about 1/2 spoon filling. Fold dough over filling to meet in the center; pinch edges to seal.
5. Place seam side down on a greased oven tray. Cover and let rise in a warm place until doubled, about 30 minutes. Brush with eggs. Bake at 350° for 20 minutes or until golden brown. Serve warm.
